Section 6.1 Dining Today There are five different types of dining establishments: fine-dining, theme restaurants, casual-dining, quick-service, and catering. There are also several different styles of meal service.

Types of Dining The five most common types of dining: Fine-Dining Restaurants A fine-dining restaurant may be known for its chef or location. fine dining A restaurant that provides an environment featuring excellent food, elegant decor, and superior service.

Types of Dining The five most common types of dining: Theme Restaurants Most theme restaurants have a lesser emphasis on food. theme restaurant A restaurant that tries to recreate another place or time.

Types of Dining The five most common types of dining: Casual-Dining Establishments These can be family style, neighborhood shops, or grills and buffets. casual-dining establishment Restaurant that features a relaxed environment and mid-range prices. buffet A style of service in which all the food is attractively displayed on a table for the customers to see.

Types of Meal Service Modern American plated service is an efficient style of service. modern American plated service Meal service in which the food is completely prepared, portioned, plated, and garnished in the kitchen. The servers carry the plated food from the kitchen and place the prepared dishes in front of the customer.

Types of Meal Service Booth service requires that customers are served from a single focal point. booth A type of seating arrangement in which the table rests against, or is attached to, a wall.

Types of Meal Service Family service allows customers to choose their own portions, but can result in food waste. family service Meal service in which food is delivered on a large platter or dish to an individual table and customers serve themselves.

Types of Meal Service Banquette service requires the server to treat both ends as focal points. banquette A type of seating arrangement in which customers are seated facing the server with their backs against the wall.

Types of Meal Service Classical French service requires a team system: captain front waiter back waiter/runner busser classical French service The most elegant and elaborate style of service; involves presenting or preparing some foods tableside.

Types of Meal Service Russian/English service is ideal for banquets where everyone is eating the same meal. Russian/English service Each course is completely prepared, cooked, portioned, and garnished in the kitchen and then placed on a service plate or platters. Each customer is served a portion of the product from large platters.

Types of Meal Service Butler service is cost-effective, but there is no control over the amount of food eaten or its presentation. butler service The server carries the prepared food on a silver tray to standing or seated customers. Customers then serve themselves.

Section 6.2 The Dining Room Environment Maintaining the dining room environment means keeping stations stocked and setting tables appropriately. A well-set table includes napkins, settings, and centerpieces.
