Barker’s Highland Beef Naturally Scottish, naturally the best for those who love good eating Highland beef is outstanding for its flavour, tenderness and fine texture – all attributed to a combination of factors – the breed itself, a grass based diet, good management and very importantly, correct handling of the carcass. This includes ensuring that the sides of beef are well hung for a minimum of three weeks before cutting. Lean and low in cholesterol, Highland beef carries just the right amount of marbling through the meat to give that succulence and flavour so typical of old fashioned traditional beef. The Barkers apply the highest standards of livestock management and welfare to their cattle, without the use of unnecessary anti-biotics or growth promoters. Besides being registered with ‘Quality meats Scotland’ their farming system is environmentally friendly which benefits wildlife and biodiversity.

Loch Arthur Organic Cheese The Loch Arthur Community has a population of 76 people, some of whom are men and women with learning difficulties. They have over 500 acres of land, a large mixed organic farm including some 38 dairy cows which provide the milk for their award winning farmhouse cheeses. SPINK’S ORIGINAL ARBROATH SMOKIES Iain Spink won the Scottish Champion ‘UKTV Local Food Heroes’ in 2006, and has featured in numerous TV programmes. His smokies have been endorsed by celebrity chefs such as Rick Stein, Gordon Ramsay and Nick Nairn. Iain uses the same methods that were used in the late 1800’s, smoking the fish in halved barrels with fires of beech and oak chippings underneath. The fish is then hung over the pit and covered with damp hessian for minutes. The result is a truly mouth watering product, which we have combined with low fat cream cheese to produce a delicious healthy sandwich.

Roger and Sue Lucey have been producing free range poultry since 2002, and are passionate about the quality of their product, which is why they go to great lengths to ensure their poultry enjoys the best of living conditions and are fed on a 100% diet of corn with no artificial supplements. The result being that the meat is leaner and the flavour more developed.
