Stabilizers  Often added to stablize dispersed states… keep them from separating.  Inorganic phosphates (trisodium phosphate) can stablize emulsions  Metal bowls – chefs prefer these to beat egg whites… minute traces of the metal are incorporated into the foam and actually stabilize it.
