What is a Heated Surge Tank? A multipurpose storage tank Can protect a process by controlling excess material Heat exchange provides temperature control Material can be pumped into or out of the tank May include level and pressure controls in addition to temperature controls

Ice Cream Pasteurization During the pasteurization process the materials are added to a heated surge tank. They are kept at a high temperature for short amounts of time. They are then pumped to the next stage in the ice cream making process as indicated by the level control.
