The Dehydration Process : Working Principle Three things are needed to successfully dry food in a small scale setup: Heat — Hot enough to force out moisture (140°F), but not hot enough to cook the food; Dry air — To absorb the released moisture Air movement — To carry the moisture away. Our dehydration technology uses the combination of the above three things to dehydrate fruits and vegetables. The working principle involves the blowing of hot and dry air over the vegetables & fruits in an enclosed dehydrator to completely remove moisture content from them.
