Important thing to do for FOOD SAFETY HAND WASHING Important thing to do for FOOD SAFETY Sadia Shaukat Sodexo Dietetic Intern, 2013

Fighting Food Safety WASH YOUR HANDS What is one of the most important thing you can do to fight food poisoning? Here are a few hints: It takes only 20 seconds (if you do it the right way). It requires only 3 ingredients. Anyone can do it, even very young children. WASH YOUR HANDS

Fighting Food Safety Wash Your Hands. Over and over again, Studies have shown that hand washing is one of the most effective ways to prevent the spread of many types of infection and illness—including foodborne illness. Poor personal hygiene of workers causes 25 to 40 percent of all food borne-related illness. Many foodborne diseases and pathogenic microorganisms are spread by contaminated hands. Harmful bacteria, or pathogens, are found on almost everything we touch. People can carry them in or on their bodies, pick them up when handling raw food or by touching objects that have been previously contaminated. Once our hands are contaminated, it is very easy for these harmful organisms to spread to our food and cause illness.

Wash your hands the right way Wet your hands with clean running water (warm or cold) and apply soap. Rub your hands together to make a lather and scrub them well; be sure to scrub the backs of your hands, between your fingers, and under your nails. Continue rubbing your hands for at least 20 seconds. Need a timer? Hum the "Happy Birthday" song from beginning to end twice. Rinse your hands well under running water. Dry your hands using a clean towel or air dry. Turn off faucet with paper towel- not with your clean hand.

When to wash your hands After Using the restroom Before starting to work When returning from the restroom and from breaks Before putting on gloves After eating, drinking or smocking After handling raw meat, poultry, seafood and produce Before working with ready to eat food

When to wash your hands After handling different types of foods After touching your hairs, face, nose, or any other part of body After coughing, sneezing, and blowing your nose. After cleaning After handling chemicals After handling dirty equipment After handling trash or other contaminated objects

Glove Use As soon as they become soiled Before beginning a different task After handling raw meat and before handling cooked or ready-to-eat foods Remember to WASH YOUR HANDS between changing gloves

Significance of proper hand washing Reduce bacterial contamination and risk of foodborne illness Studies showed that simple act of washing hands with soap and water reduces incidents of diarrhea from shigella and other causes by up to 35%. Hand washing is the one of the most effective and cheapest measures against infections and foodborne illness.
