Greek Pasta Salad #createfamilymealtime Directions Ingredients RECIPE CARD Greek Pasta Salad Ingredients Dressing: 6 tbsp. red wine vinegar 3 tbsp. olive oil 3 tbsp. water 2 cloves garlic, minced 1 tsp. dried oregano Salt and pepper to taste Salad: 1 box whole grain pasta (rotini, penne, elbow, farfalle, etc.) 2 cups cucumbers, peeled and diced 2 cups zucchini, peeled and diced 1 cup tomato, diced ¼ cup red onion, finely chopped ¼ cup black olives, thinly sliced ½ cup feta cheese, crumbled Directions Whisk dressing ingredients together in a small bowl. Set aside. Cook pasta according to package. Drain. Allow to cool slightly. While pasta is cooking, prepare the vegetables. Combine cooked pasta, vegetables, and feta in a large bowl. Pour dressing over salad. Mix to combine. Serve immediately, or allow to sit in the refrigerator.
