FLOW OF FOOD 1.Procurement- food picked up from local farmers and producers, or purchased from distributors like Market Day Foods 2.Production- meat and eggs will be cooked and packaged at a commercial kitchen with the rest of cold meal components 3.Chilling/chilled storage- Food will be cooled following the cook-chill method and stored on-site 4.Meal assembly- Orders are placed by customer, meal components will be staged together, and ready for pickup by "Box Lunch Bus" 5.Transportation- "Box Lunch Bus" takes meals to an pre-appointed location, TCS foods will be stored a in-bus refrigerator at 37 degrees F 6.Meal reheating- Hot components of meals like sandwiches and burritos will be re- heated using a convection 7.Service to customers- Customers arrives before their adventures and picks-up their delicious food!
