PRESENTATION BY Emmalyne Bagwell

QUALITY ASSURANCE MANAGER At Fieldale Farms Corporation

WHAT IS THE MAIN THING YOU DO AT YOUR JOB ? As a QA Manager my job is to make sure the chicken is safe to eat before being sent to the grocery store or restaurant.

WHAT IS THE FAVORITE PART OF YOUR JOB ? Working together with other employees and solving daily tasks. Working for a company who puts Food Safety first over everything else. Collecting and analyzing data.

DOES YOUR JOB HAVE AN EFFECT ON YOUR COMMUNITY ? Quality Assurance has a big impact on the community by keeping the food everyone eats safe. Without a Quality Program, Food borne illnesses and Food Allergens would spread all over the world and people could get sick.

IS YOUR JOB MORE PHYSICAL OR MENTAL ? Working in Quality Assurance the job is both physical and mental. Lots of sampling and laboratory test have to be performed every day. All data from sampling has to be put into reports and reviewed to assure the chicken is good.

DO YOU HAVE SPECIFIC CLOTHES OR A UNIFORM? A smock or lab coat must be worn when you are performing test. Hair nets, beard nets and rubber gloves must be worn to prevent contamination to the chicken.

DO YOU TEST THINGS FOR WORK? Lots of different testing is done each day. Bird rinses and swabbing are performed to check for bacteria counts and other types of germs. Water testing is performed hourly to check for PH ranges and PPM’s (Parts Per Million) on processing aids to assure chicken is being cleaned. Temperatures checks are taken hourly to assure chicken stays 28 to 40 degrees before shipping to the store.

DOES YOUR JOB INVOLVE A LOT OF THINKING AND PLANNING ? New company policies and USDA regulations are made and must be followed. Therefore, new testing methods and process changes have to be planned out and be implemented by certain time frames.

THREE IMPORTANT RULES TO DO AT HOME WHEN HANDLING AND COOKING CHICKEN. Meat Storage Always store meats in the bottom of the refrigerator and maintain a temperature of 40 degrees or less. Hand Washing Always wash hands after handling chicken to prevent any cross contamination. Cooking Temperatures When cooking poultry be sure internal temperatures must reach at least165 degrees.
