2 Notes: This slide is presenting a simple graphic related to the project. The graphic is showing a cooking scenario. At the bottom of the illustration a text with the title of the project is aligned with the picture. Animation (yes or no): no Text/Audio Narration: Hello my dear friends!!! I am Niurka Fernandez and we will have a fun adventure that will end with the opportunity to enjoy a delicious dessert called flan. Let’s get ready to learn about the tools, ingredients, and cooking techniques that will lead us to a sweet finale. Title: How to prepare a flanScene (opening page): Greetings & Intro Graphics (yes or no) : yes Audio (yes or no): yes Slide number: 1 Skill or Concept: Introduce the topic How to prepare a flan

3 Notes: This slide is presenting the cooking tools that will be needed to measure and mix the ingredients to prepare the flan. Animation (yes or no): yes Text/Audio Narration: These are the main tools that we will use to prepare the caramel and the flan mix to cook our delicious dessert. Title: How to prepare a flan Scene: Cooking tools Graphics (yes or no): yesAudio (yes or no): no Slide number: 2 Skill or Concept: Introduction of the cooking tools that will be used during the project. From biggest to smallest, the third one is a teaspoo n. This is the special pan to cook the flan. It needs water in the bottom part and the flan mixed goes on the upper piece. This is a blender. The ingredients will be mixed in here. This is a regular cooking pan Which will be used to prepare The caramel mixed. This is a measuring cup to add the exact amount of some of the ingredients.

4 Notes: This slide shows the list of ingredients needed for the flan as well as some representational graphics of the ingredients. Flan’s Ingredients Three eggs One can of evaporated milk One can of sweetened condensed milk Eight ounces of cream cheese Three teaspoons of almond extract ½ cup of water Two cups of sugar Animation (yes or no): no Text/Audio Narration: This is the list of ingredients that we will need to prepare our dessert: Three eggs, one can of evaporated milk, one can of sweetened condensed milk, eight ounces of cream cheese, three teaspoons of almond extract, half cup of water, and two cups of sugar. 5 Notes: This slide shows a transformational graphic which allows the audience to see the change that occurs in the sugar mix from the beginning until the time that is ready to be pored into the flan cooking pan. Animation (yes or no):no Text/Audio Narration: Preparing the caramel is the first step that we have to complete before the flan mixed is poured into the flan cooking pan. I give special attention to it because that nice soft brown color that makes this dessert so appealing will depend on how careful we are in completing this step. To prepare the caramel, first, pour the two cups of sugar, the half cup of water, and one teaspoon of almond extract into the regular cooking pan(do not stir to avoid crystallization). Next, place the regular cooking pan on the burner on medium heat. Like the picture shown above, the sugar mix needs enough time on the stove to obtain that rich texture and soft brown color. A personal practice that I use to ensure that the caramel is ready is to take some of the mix in a little spoon and pour some cold water over it. If the caramel gets hard, this is the last step before we transfer the mix into the flan cooking pan. 6 Notes: This slide is showing a representational graphic of the caramel being poured into the flan cooking pan. Animation (yes or no):no Text/Audio Narration: After the caramel is ready, the bottom part of the flan cooking pan must be filled with water until the line designate for that purpose. On the upper part of the pan, pour the caramel mix (with extreme care because it will be very hot) and try to spread it as much as possible. After the caramel has been poured, place the upper part of the flan cooking pan inside the bottom part and allow the caramel to hardener. After the caramel cools down, we will be ready for our next step in preparing our dessert. Title: How to prepare a flan Scene: Pouring caramel into the flan cooking pan. 7 Notes: This slide shows another representational graphic with on- screen text on how to mix flan ingredients and obtain a mixture with specific characteristics. Animation (yes or no): yes Text/Audio Narration: To follow these steps on mixing the flan ingredients will ensure the appropriate appearance and consistency that the mixture needs to be ready to be poured into the flan cooking pan. Title: How to prepare a flanScene: Directions on how to mix the ingredients Graphics (yes or no) : yes Audio (yes or no): no Slide number: 6 Skill or Concept: How to blend ingredients for flan mix. Mixing Directions As my personal experience, to obtain the best results in the richness of the flan mixture, the ingredients should be added in the following order: 1. Eggs, cream cheese, almond extract, and evaporated milk should be poured first into the blender to be mixed for two minutes. 2.With the blender on, the small middle part of the lid should be removed to slowly pour the sweetened condensed milk until the mixture seems creamier. 3. After the mixture gained that consistency, the blender should be turned off to continue with our next step.

8 Notes: This slide presents a graphic which represents the way that the flan mixture should look when is ready to be poured in the flan cooking pan. Animation (yes or no): yes Text/Audio Narration: This is the mixture that we obtained from blending all our ingredients in the specific manner that was mentioned in the previous slide. This is the appearance and consistency that we are looking for to cook our dessert to perfection. I cannot wait. What about you my Phoenix’s friends? 9 Notes: This slide shows a representational graphic with a lady in front of a stove to remind participants that the flan cooking pan will be placed on a burner instead of the oven (some flans are cooked in ovens, but ours does not need to because we are using a special pan). Animation (yes or no): no Text/Audio Narration: Now, we will place the flan cooking pan on the stove for a period of 40 minutes on medium heat. While our dessert is getting ready, we will be sharing some of the information that we have been learning to prepare our flan. Let’s get ready to review. 10 Notes: This slide will offer the participants the opportunity to review in a fun way some of the ingredients of the flan. There are three simple questions with the answers covered by yellow squares that will be moved by animations after somebody answers the question. Let ‘s check what we have learned Animation (yes or no): yes Text/Audio Narration: While our dessert gets ready, we will use some time to answer a few questions about what is needed to prepare a flan. After I ask the question, I will give you some seconds to think about the answer which you will keep in your mind until I reveal the answer by removing the yellow square that by the way will cover the answers again. Our first question asks how many eggs do we need to prepare a flan (pause). If your answer was three, you answer was right because that is what is requested from the list of ingredients. The next question asks how many ounces of cream cheese are needed for a flan(pause). If your answer was eight, your answer is correct and that means that good listening skills were used. Our last question asks how many cups of sugar are needed to prepare the caramel of a flan (pause). If your answer was two, the answer is perfectly right because that is the exact amount of sugar required for the caramel. If some of the answers were not correct, it is important to remember that the list of ingredients of a recipe should always be next to the cook in case that some of them be forgotten. 11 Notes: This slide shows three possible unexpected situation that can be presented when a person is preparing a flan. This activity would be completed by forming groups of two and assigning each group one of the situations. The collaborative technique to be used will be Rally Robin where each person will have the opportunity to share his/her position while the other listens and after that, the roles will change, so everybody can have the opportunity to offer their points of view. Unexpected situations Animation (yes or no): no Text/Audio Narration: At this time, three groups of two people will be formed randomly and each group will be assigned one of the three situations presented in the slide. Each person will have the opportunity to share his/her inside while the other partner listens. After the first person shares his/her thoughts, then roles will be switched, so every person can offer an individual solution to the situation. After both partners have shared, each group will choose a person to share with the rest of the participants how they solved the situation, in what points they agreed, and in what points they differed. Title: How to prepare a flanScene: Collaborative activity about unexpected situations during the process of preparing a flan. Graphics (yes or no) : no Audio (yes or no):yes Slide number: 10 Skill or Concept: Collaborative learning. 1. What would happen if at the time to mix the ingredients you use ten ounces of cream cheese instead of the eight ounces requested from the list of ingredients? 2. What would be your individual suggestion if during the preparation of the caramel the sugar mixture gets too dark? 3. What do you think would happen if by accident you miss one of the ingredients while you are mixing them in the blender?

12 Notes: This slide shows representational graphics and text explaining how to verify if the flan is fully cooked after 40 minutes, or if some extra time is needed to complete the cooking process. …and after 40 minutes have passed, it will be time to check if our flan is fully cooked. Animation (yes or no): yes Text/Audio Narration: This is the way that is used to verify if the dessert is fully cooked. Title: How to prepare a flan.Scene: Cooking timer and kitchen utensil. Graphics (yes or no) :yes Audio (yes or no): no Slide number: 11 Skill or Concept: How to verify when the flan is fully cooked. This utensil can be used to verify how deeply cooked is our dessert. We just have to insert the sharp part of the knife into the already solid mass of the flan. If the knife comes back totally clean, it means that the cooking process has finished. If the knife comes out with some small pieces of the mass, then our flan will need some extra minutes to be completely cooked.

13 Notes: This slide shows three representational graphics with an on- screen text description contiguous to them. The deep metal bowl, ice cubes, and the upper part of the flan cooking pan are used to help the recently cooked flan cools down. Deep metal bowl Animation (yes or no): no Text/Audio Narration: A flan is a cold dessert which means that is meant to be eaten when is cold. After the flan is fully cooked, it is necessary to find a way to help it cools down before it is placed in the refrigerator. A technique that has been successful for me is to fill a deep metal bowl half way with ice cubes and place the upper part of the flan cooking pan (the part where the flan mixture was poured) in it for 50 minutes. Title: How to prepare a flan Scene: Deep metal bowl and ice cubes. Graphics (yes or no) :yes Audio (yes or no):yes Slide number: 12 Skill or Concept: How to cool down a recently cooked flan. Ice cubes Upper part of the flan cooking pan

14 Notes: This slide is showing four representational graphics that involve the transferring of the cooked flan to the desired container. 1. Flan already cooked 2. Desired container covering the upper part of the flan cooking pan 3. Upper part of the flan pan 4. flan already transferred placed up side down Animation (yes or no): no Text/Audio Narration: After the 50 minutes cooling down, it is time to transfer the cooked flan (like shown in picture one) to the desired container. To be transferred smoothly, the flan container should be placed covering the top part of the upper part of the special pan (like shown in picture two). That upper part will be placed up side down, so the flan will be transferred to the new container with the bottom part up (like shown in picture three). This means that the part of the flan that we can see when it is placed in the deep metal bowl will be the bottom part of the flan (like shown in picture four).
