2 INTRODUCTI ON Ice cream is a luxurious frozen dessert and is usually made from dairy products like milk and cream. They are often combined with fruits or other ingredients and flavours. It’s typically sweetened with sucrose, corn syrup, cane sugar and beet sugar. Did you know? The world’s tallest ice cream cone was over 3 METRES TALL?

3 HISTORYHISTORY 400 BC- Persians invented a s peci al chilled food made from rose Water, vermicelli, fruits and saffron. 200 BC- A frozen mixture of milk and rice was used in China. 1533- When Italian duchess Catherine de' Medici married the Duke of Orléans (Henry II of France), she is said to have brought with her to France some Italian chefs who had recipes for flavoured ices or sorbets. 16 th Century- The Mughal emperors used relays of horsemen to bring ice from the Hindu Kush to Delhi, where it was used in fruit sorbets 1674- The first recipe in French for flavoured ices appears. 6 3/4 cup (185g) sugar 1 cup (250ml) milk 1/4 teaspoon salt 2 tablespoons unsweetened cocoa 3 egg yolks, lightly beaten 60g dark chocolate, chopped INGREDIENTS RECIPERECIPE METHOD 1.Combine sugar, milk, salt and cocoa in a saucepan over medium heat, stirring constantly. Bring to a simmer. 2.Place the egg yolks into a small bowl. Gradually stir in about 1/2 cup of the hot liquid then return the contents of the bowl to the saucepan. Heat until thickened, but do not boil. 3.Remove from the heat and stir in the chopped chocolate until the chocolate is melted. Pour into a chilled bowl and refrigerate for about two hours until cold, stirring occasionally. 4.When chocolate mixture has completely cooled, stir in the cream and vanilla. Pour into an ice cream maker, and freeze according to manufacturer's directions.
