2 1. A hotel has redesigned its kitchen. Before the kitchen can reopen the EHO will need to visit. Explain the role of the EHO within the kitchen area. When visiting the kitchen the EHO will look for: Ensuring the work place is safe and free from hazards Making sure staff are aware of HASAWA Check that the business is complying with regulations Ensuring that staff have received training on equipment Ensuring that food handlers have basic hygiene certificates Ensuring that appropriate temperature control is used for storing food – dry store, chilled, hot held.

Explain the ways in which the EHO can enforce the Food Safety Act The act gives the EHO the power to: Enter any food premises at any time Inspect food Take samples of food away for analysis Confiscate any food they judge to be unfit Issue ‘improvement notices’ to food businesses Close premises down (If taken to court by the EHO, punishments include fines and imprisonment)

4 3. Describe the role of the EHO in enforcing current legislation. To check facilities are up to standard Check hygiene procedures/records To inspect food storage areas To check fridge temperatures To check for pest infestation Check food is fit for sale Check hand washing facilities are available Ensure appropriate temperature monitoring e.g. cooked food, storage of food Give advice on hygiene qualifications Enforcement/prosecution
