3 Adding More Detail to the Basic Classification Scheme FOAM: a substance that is formed by trapping many gas bubbles in a liquid or solid. COLLOID: a type of mixture in which one substance is dispersed evenly throughout another EMULSION: a type of colloid made from two or more immiscible (mix without blending) liquids.

9 MAKING CHOCOLATE MOUSSE 1 plastic table cover 1 stainless steel bowl 1 wire whisk 1 measuring cup 2 bars chocolate 1 bottle water 1 pair of gloves 1 hot plate 1 ice bath STEPS 1.Everyone needs to wash their hands 2.Cover the work area with the plastic table cover 3.Choose one group member to handle the chocolate – this person should put on the gloves 4.Break the chocolate into small pieces into the bowl 5.Add ½ cup water 6.Place the bowl on the hot plate and stir until all the chocolate is melted and blended with the water 7.Remove from heat, place on ice and take turns vigorously whisking the mixture until a stable foam is formed 8.Sample and taste if you wish MATERIALS
