1. Puerto rico Puerto rico. The holidays begin as early as November and can continue until mid-January. At the stroke of midnight, local tradition demands that you eat 12 grapes for luck. You'll also find some people sprinkling sugar outside their house for good luck or throwing a bucket of water out the window to expel all the negatives of the old year and get ready for a fresh start. As for where to be when the clock strikes 12, head to the Puerto Rico Convention Center for the fireworks show.

2. Cuba hristmas in Cuba is not marked by the grandiose feasts and decorations that characterize many Hispanic Christmas celebrations in other countries in North, Central and South America. But this was not always the case. Before the fall of Batista, Christmas in the island used to be a big Catholic celebration. To make matters worse for the Catholic Church, in 1962 Cuba became an atheist country. In Cuba Christmas was officially removed from the calendar in 1969. The reason? Fidel Castro thought this holiday was interfering with the production of sugar cane which is the main export of the island. When talking about the celebration of Christmas in Cuba it is important to see it from three perspectives, prior to Fidel’s revolution, after Fidel’s revolution and how exiled Cubans celebrate in the U.S.

3. Nicaragua Most people in Spain go to Midnight Mass or 'La Misa Del Gallo' (The Mass of the Rooster). It is called this because a rooster is supposed to have crowed the night that Jesus was born. Most families eat their main Christmas meal on Christmas Eve before the service. The traditional Spanish Christmas dinner is 'Pavo Trufado de Navidad' which is Turkey stuffed with truffles (the mushrooms, not the chocolate ones!) In Galicia (a region in north-west Spain, surrounded by water) the most popular meal for Christmas Eve and for Christmas Day is seafood. This can all kinds of different seafood, from shellfish and mollusks, to lobster and small edible crabs. After the midnight service, people walk through the streets carrying torches, playing guitars and beating on tambourines and drums. One Spanish saying is 'Esta noche es Noche-Buena, Y no Es noche de dormir' which means 'Tonight is the good night and it is not meant for sleeping!'

4. Honduras Christmas is perhaps the biggest celebration of the year for Hondurans. It is filled with religious meaning, as the commemoration of the birth of Jesus Christ is at heart of it. Christmas is celebrated at the stroke of midnight on the night of the 24th of December (as opposed to the 25th in other countries). For Hondurans, Christmas is a very special and emotional occasion and is important to spend it with the family. Just before midnight, the family will gather and pray together, which may include the reading of passages of the Bible that narrate the birth of Jesus Christ. Once the prayer is finished, the family members engage in a round of hearty hugs and wish each other "¡Feliz Navidad!". The Christmas meal is usually served after this. The Christmas meal itself is extremely important. Usually, it takes several days to prepare and several days to recover from it. The typical menu is a combination of the traditional Latinamerican menu plus items borrowed from the North American Christmas menu: Tamales, Torrejas,Sweet potato puree, eggnog, Roasted pork ham Roasted turkey (or chicken),Stuffing,Cranberry sauce

5. Nicaragua the Christmas dinner is something everyone looks forward to here, as in elsewhere. On the morning of December 24th, all in the family work together to prepare the Christmas dinner. The Nicaraguan Christmas celebration is largely influenced by ancient Spanish traditions. Hence, the menu traditionally consists of Valencian style rice similar to Paella, stuffed chicken, nacatamal, and freshly baked bread. Spanish biscochos are served for dessert. In Nicaragua, the extended members of the family and friends are invited to each others homes to celebrate Christmas. At night, everyone in the family prepare to go to church. On Christmas Eve, church bells are rung which signify the start of the Midnight Mass. Thousands attend this Christmas Eve Mass, after which everyone enjoys the Christmas dinner together. White-coloured Christmas cards are exchanged on this occassion. Everyone wishes "Feliz Navidad" (meaning "Merry Christmas" in Nicaragua) to another.
