Each photo was authenticated and included the date.

19. Snapshots contd Apprentice loves making and decorating wedding cakes. Kept photos in folder + video of each cake - her record, as well as helping her make sure she did it right next time. Captured customer comments as an audio component of the e-portfolio. Record of her achievements as well as stimulating and inspiring others.

21. Snapshots contd Groups of 3 or 4 apprentices worked together to diagnose and respond to sugar trials. Each apprentice had a different task within the group. Each had to do their analysis, prepare a short report, and communicate this to the group next day. Some presented written reports; others used video. All reports were included in the apprentice’s individual portfolio.
