3 Portfolio definition This resource uses the term portfolio in the sense of: a collection of evidence of a person’s acquired skills, knowledge and relevant experience, used as a record of lifelong learning and as a career passport.

13 Examples from trials Employability Skill: Team work Statements, Actions & Achievements: Over Easter last year we all made 11460 hot cross buns over a four week period. I was making them and the shop assistants were bagging frantically. It took a lot of working together to get them done on time. Third year apprentice

14 Examples from trials contd Employability Skill: Teamwork Statements, Actions & Achievements: If I have finished my work I will go & help someone else. If someone is running behind time I will try to help. Employability Skill: Planning & organising Planning & organising the day’s production: making sure that the things that take the longest are in the oven first. Being good at time management: having more than one thing going at once. second year apprentice

15 Examples from trials contd Employability Skill: Initiative & enterprise Statements, Actions & Achievements: I thought it would be a good idea to do jams & chutneys as our vegie garden was abundant with tomatoes, capsicum, plums, apricots etc… So I ordered decorative jars, made labels & put it all together. Then I made up some gift baskets. Employability Skill: Technology Statements, Actions & Achievements: Used computer to design and print labels for jams & chutneys third year apprentice

18 Snapshots of trainer methods & real-life experiences Digital photography Trainer integrated the use of photos into delivery of some units Most apprentices responded very well In the training environment, he took photos of all completed work with the apprentice who baked it. Each photo was authenticated and included the date.

19 Snapshots contd Apprentice loves making and decorating wedding cakes. Kept photos in folder + video of each cake - her record, as well as helping her make sure she did it right next time. Captured customer comments as an audio component of the e-portfolio. Record of her achievements as well as stimulating and inspiring others.

20 Snapshots contd Research OHS legislation Trainer supplied lists of web links Apprentices had to find hard evidence and complete assessment sheets in books with tear-out pages. When marked and returned to them, they added this hard copy to their ring binder portfolios.

21 Snapshots contd Groups of 3 or 4 apprentices worked together to diagnose and respond to sugar trials. Each apprentice had a different task within the group. Each had to do their analysis, prepare a short report, and communicate this to the group next day. Some presented written reports; others used video. All reports were included in the apprentice’s individual portfolio.

23 One apprentice commented: (A portfolio approach) made me realise just how much I have learned and how much more I want to learn and grow as a baker.
