Slicing a contaminated product will lead to contamination of all slicer components > 90% of Listeria transfer from the blade to the product occurs during the first 10-15 slices of delicatessen meats after mechanical or knife slicing Deli meats will “clean” the slicer blade, but with varying effectiveness
