Welcome to the MSC staff training presentation 2016. We suggest for this training to find a time and a place to go through this presentation with all your staff together. However, if this is not possible, you can distribute this presentation to your members of staff who can go through it individually. Staff will have to sign a training record to confirm they have gone through this presentation and completed the short quiz that accompanies it. You will have to use this training record as evidence for your online audit. If you have any issues or questions about this presentation, please get in touch with your contact at the MSC or NFFF.

2 Marine population decline between 1970 and 2012
1) What is the problem? Over the last 100 years, the world's fish stocks have seen a shocking decline. The majority of stocks are now considered fully-exploited, overfished or depleted, and we are in danger of losing some species altogether. According to WWF, marine populations declined by 49% between 1970 and 2012. It is therefore important that we do something in order to make our oceans sustainable so there will be plenty of fish left in the future. 49% Marine population decline between 1970 and 2012 What is the problem? This slide is to discuss the issues our world’s oceans are facing today. This is important to ensure yourself and staff are aware of the benefits of serving fish from sustainable sources. Sustainable fish populations means that these fish are not being over-fished so the population can continue to reproduce and create fish for future generations.

3 2) Who are the MSC? The MSC is an international non-profit organisation addressing the problem of unsustainable fishing. The MSC believe a sustainable seafood market is crucial to making their vision of a sustainable ocean a reality. The MSC program assesses wild capture fisheries only. Fisheries are assessed against a scientific sustainability standard and independently assessed by a third party auditor in order to gain MSC certification. Who are the MSC? It is important that yourself and staff understand what the MSC’s vision and mission is and how they help to support sustainable oceans.

5 3) What is chain of custody?
The MSC blue label is only used next to fish that is caught from certified fisheries. The MSC chain of custody (CoC) standard guarantees that the fish served with the MSC’s blue ecolabel is sustainably caught and traceable. By applying for MSC chain of custody, your business can use the distinctive blue ecolabel on your menu. However, your business must ensure that all the criteria of the MSC’s CoC is being met (see image). What is chain of custody? This slide relates to the certification of your business as you will be applying for MSC chain of custody certification.

What you need to know: This next section will go through what your staff need to understand in order to gain MSC certification. This is split into; Ordering, delivering, in the kitchen and serving and selling. Each section highlights the individuals who should be aware of the process, what the MSC CoC code is and what you need to know to make sure you adhere to it.

8 1) Ordering MSC Individual(s) involved in the day-to-day ordering of products. Who? Your MSC fish must be ordered from a supplier with a valid MSC Chain of Custody certification. MSC CoC 1) Which products need to be ordered as MSC. 2) Which suppliers you can use. 3) Do not use any new suppliers for MSC fish without asking the manager. Need to know

9 2) Delivering MSC If you handle and receive deliveries Who?
‘MSC’ should be written on the delivery documents, so you can check that the products are definitely MSC certified. MSC CoC 1) Always check that the products delivered match the delivery note. 2) If they don’t either send them back to your supplier or inform a manager. Need to know

10 3) In the kitchen If you are preparing or storing MSC and non-MSC fish. Who? Your MSC fish must be separated from non-MSC fish when stored. MSC CoC 1) Keep MSC fish in their original packaging / on a separate shelf / label when kept in the fridge. 2) Your manager will let you know the procedure. Need to know

11 4) Serving and selling If you work in the front of house or serve customer. Who? You can use the blue MSC ecolabel on the menu to identify MSC fish. MSC CoC 1) Make sure you are aware of what this label means as customers may ask. E.g. This label means the fish is from a sustainable source/an MSC certified sustainable fishery. Need to know

12 5) What to do if… 1) You find a problem but no mislabelling has occurred: -Record the non-conformity -Take action to prevent reoccurrence -Inform the group manager at your next audit 2) You have found that non-MSC fish has been sold as MSC e.g. MSC ecolabel is on the menu, but the fish runs out and is substituted for a non-MSC fish: -Alert the group manager -Record the incidence of the non-conformity -Follow corrective action as advised by the Group Manager. 3) Some fish is discovered, but you don’t know if it’s MSC e.g. your supplier has stopped labelling your MSC deliveries: -Alert the Group Manager within 2 days -Don’t sell the fish as ‘MSC’ What to do if… This slide goes through some incidences that could happen when you are serving MSC fish. To ensure that the fish that the customer buys is assured as an MSC certified fish, we have outlined steps for each of these cases.
