Grease Traps, Liquid Waste Haulers, and You Cynthia Arias Pollution Control Coordinator

City of Carrollton’s Liquid Waste Ordinance Identify generators and haulers in the city Prevent the illegal disposal of non- hazardous liquid waste, Eliminate sanitary sewer blockages and overflows, Protect public health and the environment

Who is a Generator? A person who causes, creates, generates, or otherwise produces liquid waste Restaurants/Food Establishments Automotive Repair/Service Stations Car Washes Industry Apartments

What is liquid waste? Water-borne solids, liquids, gaseous substances derived from sources, such as, but not limited to grease traps, grit traps, chemical/portable toilets, septic tanks and/or washwater operations.

Who needs a grease trap? Heavy prep – requires a 1000 gallon trap Light prep – requires a 500 gallon trap Sizing is based on menu, appliances, and types of cooking methods

Do I need to upgrade? What if the establishment has no trap or the trap is smaller than the one now required for that type of establishment? –What causes a new trap to be installed Change of ownership Remodel History of violations Changes in menu served

Your Requirements as a Liquid Waste Generator Must not allow liquid waste to accumulate Service traps at least quarterly or as required for proper function Use a City of Carrollton permitted liquid waste hauler - CAR ### Make sure hauler uses a City of Carrollton Trip Ticket Supervise the hauler during pickup

Overdue for pumping

Your Requirements as a Liquid Waste Generator Cont… Entire contents of trap must be cleaned and walls scraped Retain your copy of trip ticket on the premises for at least three years Two copies – yellow at the end of the pumping and a green final copy

Trip Ticket

Pumping Frequency Traps are required to be cleaned and pumped completely empty ever 90 days –Exception to the rule Less than 25% of the weighted height of the interceptor as measured from the bottom to the invert of the outlet pipe The interceptor will produce an effluent, based on defensible analytical results, demonstrating consistent compliance with established local discharge limits determined by the POTW (publicly-owned treatment works)

Why? Frequent and regular pumping of a trap is our best defense in keeping grease and other liquid waste out of the city’s sewer line.

How Do I Obtain A Variance? Intent of seeking a variance must be received in writing Must use a Dipstick Pro to obtain accurate readings to take weekly measurements that are to be witnessed by Environmental Services It is up to the food establishment to make all arrangements to prove that pumping can be delayed without compromising the trap Depending on conditions may be able to have a pumping frequency of up to a maximum of 180 days

Closures Grease traps /interceptors must be pumped before abandoning the property.

Clean Outs Make sure cleanout caps are intact and screwed into sewer line. Any broken or missing caps need to be replaced.

Remember… If you generate any type of liquid waste Educate your employees on how to properly dispose of fats, oils and grease along with other waste products.
