5 Which nutrients are found in salad? 6 Basic Nutrients- Carbohydrates, Protein, Fats, Vitamins, Minerals, and Water

6 There are 2 basic types of Salad Dressing Vinaigrette – 3 oils to 1 vinegar (3:1 ratio) Mayonnaise Based Is your favorite salad dressing a vinaigrette or mayo based? What is your favorite salad dressing?

7 Salad Preparation Arranged: Pieces purposefully placed Mixed: Tossed and random

8 Care for Salad Greens Crisp up greens by placing in ice water for a few hours before serving Drain thoroughly Greens may be broken or shredded according to the purpose Do not over handle or greens become bruised and wilted Never freeze

9 Different Kinds of Greens Iceberg Green Leaf Bibb Endive Romaine Chinese Cabbage

10 How should we arrange a salad?

11 It needs to be FRESH! Fresh enough to have a frog living in your lettuce (but don’t eat the frog and WASH your lettuce!) -Focus on freshness, why?

12 C O L O R -Make it colorful, why?

13 Texture – salad items need to have the right texture (crisp, soft, smooth…) WHY?

14 Ingredient Preparation -Ingredients should be well drained and cut into convenient eating sizes

15 Final Preparation - Prepared right before serving. Dressing should be mixed in all together right before OR placed in a container off to the side. NO ONE likes soggy salad, yuck!

16 Italian Pasta Salad 1/2 pkg. Pasta, cooked & cooled (fun shape) 10 Olives, cut in half ¼ onion, sliced & quartered ½ Tomato, diced ¼ c. Pepperonis, sliced into strips ½ c. Broccoli flowettes and stems (PEELED), cut small (SMALL DICE) ½ c. Cauliflower flowerets, small (SMALL DICE) ¼ bottle Caesar Italian dressing ¼ bottle Italian dressing 2 TB Parmesan cheese *Prepare all ingredients. Combine all ingredients in order & toss lightly. Top with parmesan cheese. Eat and enjoy!
