2 INGREDIANTS o 2 cups (220g) chocolate cookies,crushed o ¾ cup (170g) butter,melted o 4-8 oz (230g) packeges cream cheese o 1 cup (200g) white sugar plus 1 tablespoon o 1 cup (230g) sour cream o 3 eggs o 1 cup (180g) semi-sweet chocolate,melted o 2 teaspoon coffee powder(do nott use instant coffee) o ¼ teaspoon almond extract

3 Step 1 o Preheat your oven to 450F (230c,gas mark 8) and set aside a 9 to 12” springform baking pan.

4 Step 2 o Put the chocolate cookies in a plastic bag or a freezer bag and place it on a counter.

5 Step 3 o Crush the cookies by pressing the base of a drinking glass into them.

6 Step 4 o pour the crumbs into a medium bowl,along with the teaspoon of sugar and all of the melted butter.

7 Step 5 o Pour the mixture into the pan you set aside earlier.

8 Step 6 o Press the crust evenly into the base of the pan and up its sides using your fingers.

9 Step 7 o Beat the cream cheese in a large bowl until it gets creamy.

10 Step 8 o Add the almond extract and cup of sugar to the cheese and mix them in until they are incorporated.

11 Step 9 o On at a time,mix each egg into the cheese mixture.

12 Step 10 o Add the coffee powder,sour cream,and melted chocolate to the bowl.

13 Step 11 o Mix everything together until the butter becomes a rich dark color.

14 Step 12 o Pour the butter onto the cookies crust and use a spatula to even out the top.

15 Step 13 o Bake the cake for 10 minutes.After 10 minutes,reduce the oven temperature to 300F (140 degrees c,gas mark 1) and bake it for another hour.Turn off the heat after the cheesecake is done baking.

16 Step 14 o Cool in cake in the oven for about 3 hours.Leaving it in the oven will keep it from cracking when you place it in the refrigerator.

17 Step 15 o Place the cake in the refrigerator after it’s had a chance to thoroughly cool.

18 Step 16 o Gently remove the cheesecake from the pan when you are ready to plate it.

19 Step 17 o Cut the cheesecake into individual slices,serve them on dessert plstes and drizzle leftover or additional melted chocolate over the top of the slices for an additional treat.
