2 CARMEN RESEARCH 2008 SANTA RITA BRAND ARCHITECTURE ABOUT CHILE  Chile has a long VITICULTURAL HISTORY dating to the 16th century when the SPANISH brought VINES with them.  In the mid-19th century, French wine varieties such as CABERNET SAUVIGNON and MERLOT were introduced.  In the early 1980s, a RENAISSANCE began with the introduction of STAINLESS STEEL tanks and the use of OAK BARRELS for aging.  Wine exports grew very quickly as QUALITY WINE production increased.  Today there are 14 ACTIVE WINE PRODUCING regions in Chile

9 GRAN RESERVA CHARDONNAY Winemaking Details The grapes for our Gran Reserva Chardonnay come from old vineyards in Casablanca yielding 7ton/ha. The vines grow on sandy soils which are directly influenced by the fresh sea breeze of the Pacific Ocean. The slow ripening ensures perfect acid retention and ideal alcohol balance. The grapes were handpicked and manually selected before crushing. The must was oxidized before fermentation to reduce bitterness and to increase the creamy textures on the mouth while at the same time the wine longevity is enhanced. The juice was fermented in French oak barrels. The wine remained with its fine lees for a period of 8 months. The wine did not under go malolactic fermentation. Bottle ageing for 2 months before release. Tasting Notes Nose: Ripe peach with pastry cream, almonds, pain grille and caramelized pears, cloves and vanilla. Palate: Rich and long. Great fruit and balanced. Technical Details Alcohol content: 13,9% vol. Total Acidity: 5.86 g/l pH: 3.45 Ageing potential: 2 to 3 years Food & Wine Pairings Try with pork chops, smoked ham, roasted duck or goose, fish terrine, quail, grilled and smoked salmon, richly sauced lobster, pasta with cream sauce, oyster stew, roasted peppers and cream based soups.

10 GRAN RESERVA SAUVIGNON BLANC Winemaking Details The grapes were handpicked from a selection of our cooler vineyards in Leyda Valley. The combination of soil, sun exposure, climate, as well as ripeness of the grapes, provides a great diversity of components to the final blend and produces the distinctive characteristics of this Gran Reserva Sauvignon Blanc. Tasting Notes Nose: Expressive and intense aromas of pink grapefruit and flintstone with mineral and citrus notes. Palate: The wine has great volume and character and it is crisp and refreshing on the palate. Technical Details Alcohol content: 13,2% vol. Total Acidity: 5.07 g/l pH: 2.5 Ageing potential: 2 to 3 years Food & Wine Pairings Enjoy this wine as an aperitif and with seafood of all kinds, particularly oysters, shrimp, and fish, as well as white meats and salads.

11 GRAN RESERVA CABERNET SAUVIGNON Winemaking Details The grapes were handpicked from our estate vineyards, located over the best alluvial terraces in Alto Maipo Region located near the Andes mountains. Extremely concentrated grape clusters are the result of old vineyards yielding approximately 8 ton/ha. Before fermentation the grapes are cold macerated for 12 days at 4ºC to ensure maximum retention of primary fruit aromas and to maximize color extraction. Alcoholic fermentation was carried out in stainless steel tanks at 28º - 29º C. The total maceration period was 45 days. The total blend was aged in French oak barrels for a period of 10 months, malolactic fermentation occurred naturally in barrels. After bottling, the wine was aged for an additional 2 months prior to its release. Tasting Notes Nose: Rich, plenty of blackcurrants, lead pencil, with alluring bittersweet cocoa and espresso. Palate: Rich, deep, full bodied, balanced and very long aftertaste. Technical Details Alcohol content: 14,1% vol. Total Acidity: 5.85 g/l pH: 3.37 Ageing potential: 6 to 7 years Food & Wine Pairings This is the perfect wine to enjoy with full-flavored red meats such as lamb, ribs and beef with spicy sauces. It also goes well with wild fowl, venison, kidneys, goose and ripe cheeses.

12 GRAN RESERVA CARMENERE Winemaking Details The grapes were hand-harvested from our vineyards in the hills of Apalta, in Colchagua Valley. A variation of colluvial formations and deeper soils integrate together in this blend. The grapes were carefully hand selected before crushing, A period of cold maceration (4- 5ºC) for 7 days was used to ensure maximum retention of primary fruit flavours and colour extraction. Alcoholic fermentation was carried out in stainless steel tanks at 28 º- 29ºC. The total maceration period was o40 days. The wine was aged in French oak barrels for 10 months. After bottling, the wine aged in our cellar for an additional 2 months prior to its release. Tasting Notes Nose: Intense red fruit character, hints of toasted tobacco, cedar and oaky flavors. Palate: Full body, balance, deep, velvety texture with beautiful length. Technical Details Alcohol content: 14,2% vol. Total Acidity: 5.58 g/l pH: 3.59 Ageing potential: 6 to 7 years Food & Wine Pairings Serve this wine with filet mignon, roast prime rib, roast duck, rabbit, lamb cutlets, meatballs, ratatouille, kebab, rich pasta dishes and cheeses such as Gruyère, Manchego, Parmesan, Cantal, Cheddar.

13 GRAN RESERVA MERLOT Winemaking Details The grapes were hand-picked during the last week of April. This Merlot comes from our Estate Vineyards in Alto Maipo Valley, sub appellation Pirque. It’s proximity to the Andes range encourages cool nights to obtain all the aromatic potential needed. The grapes were carefully selected before crushing. Cold maceration at 4º-5ºC took place for 8 days to extract fresh primary aromas and intense colour. Fermentation occurred in stainless steel tanks at 26ºC with selected yeasts. Malolactic fermentation took place naturally in barrels where 100% of the wine was aged using both French and American oak for 9 months. After bottling, the wine was aged for an additional 2 months before its release. Tasting Notes Nose: Rich with black cherry jams, liquorice and truffle. Palate: Full bodied, savory, deep, long. Technical details Alcohol content: 14,2% vol. Total Acidity: 5.29 g/l pH: 3.56 Ageing potential: 6 to 7 years Food & Wine Pairings Great with veal, poultry, game, pasta dishes with meat sauce, mushrooms and ratatouille

14 Winemaking Details The grapes were strictly selected before crushing and cold-macerated for a period of 10 days for maximum retention of primary fruit aromas and to stabilize color. Fermentation was carried out in stainless steel tanks with a gentle extraction program totaling 30 days that ensured elegance and intensity. The wines were transferred to new French oak barrels, where they underwent malolactic fermentation and matured for 14 months. The final blend was bottled unfiltered and aged an additional 12 months in bottle prior to release. Tasting Notes This wine boasts a deep garnet/purple color with fragrant aromas of cherries, ripe raspberries and violets, augmented by complex scents of chocolate, cappuccino, earthy spices and aniseed. It shows great structure and concentration, with a full body and long, mouth coating ripe tannins. It is a wine of great character that will age well for up to a dozen years.
