2 Pathogen Harmful microorganisms that can make you sick or produce toxins that will make you sick.

3 Type of Pathogens Bacteria Found everywhere Live in and on our bodies Some keep us healthy, others cause illness Need six conditions to grow:

4 Bacteria Conditions needed to grow: FAT TOM Food Acidity (neutral-slightly acidic) Temperature (41 and 135 degrees) Time Oxygen-some need it, some don’t Moisture-needs high moisture

5 Major bacteria Salmonella Shigella spp. E. coli Listeria Perfringens Clostridum Botulinum Campylobacter Staphylococcus aureus

6 Viruses Carried by human beings and animals Do not grow in food, are transferred through food Typically occurs by failure to wash hands!!!

7 Major viruses Hepatitis A Norovirus

8 Foodborne Illness So, what happens if one of these bacteria/viruses gets into my food? What are the symptoms of a foodborne illness? How do I keep my food safe from these pathogens?

9 FBI Wanted Poster You will research a foodborne illness and create an FBI WANTED poster. Use textbooks first as a resource, then you may research on the internet. Send pictures/text you would like printed to Sarah.Pendley@ohio.kyschools.us
