4 1. What is a Food borne Illness A food borne illness is a sickness caused by eating food which contains microbiological, chemical or physical hazards.

6 2. How Does Food Become Contaminated? How do microbiological, chemical and physical contaminates get in food?

20 8. What is the most important tool for Food Safety? A thermometer is the most important tool.

21 9. What is cross-contamination? When harmful substances such as micro-organisms and allergens travel from one surface or food to another.

22 How does cross-contamination occur? Safe food contacts contaminated food e.g. Meat drips on another food A food handler transfers harmful substance from their hands to food. A safe food contacts a piece of equipment that is contaminated e.g. Cutting board, knife, etc.
