1 PROTEIN NOTES

2 Proteins Large, complex molecules composed of many smaller molecules called amino acids Elements in proteins – carbon, hydrogen, oxygen & nitrogen

3 Functions in the body Builds and repairs cells Form bones & muscles
Help fight disease Transport substances Regulate cell processes & control the rate of reactions

4 Examples Structural – feathers, keratin in hair and nails, collagen (connective tissue) Functional - enzymes

5 Building Blocks Peptides – arrangements of amino acids (proteins)
Amino Acids – the building blocks of proteins More than 20 different kinds in humans Peptides – arrangements of amino acids (proteins) Peptide bonds – holds peptides together

6 Enzymes Functional proteins (catalysts)
Substance that speeds up the rate of a chemical reaction over 2000 times Acts on a specific substance Examples: Lactase (works on lactose), Galactase (works on galactose)

7 Foods/Words that Indicate Proteins:
Milk protein, Soy protein, Vegetable protein, Meat protein Whey Egg Whites or Whole eggs (not egg yolks) Chicken Beef Turkey Pork Seafood Milk products Cheese products Beans Any kind of nuts (peanuts, almonds, etc.) Gelatin Seeds

8 Food Energy 1 gram of protein is 4 calories
