2 Knife Skills Practice  How to Cut a Potato How to Cut a Potato  “Large Sticks” become Medium Dice (1/2 inch square)  Batonette become Small Dice (1/4 inch square)  Julienne become Brunoise (1/8 inch square)

3 Your Turn -  Wash your potato in cool running water.  Use a chef’s knife to practice these cuts:  Large Sticks > Medium Dice (1/2 inch square)  Batonette > Small Dice (1/4 inch square)  Julienne > Brunoise (1/8 inch square) PLANKS > STICKS > SQUARES  SAVE ALL SCRAPS!!!  Combine like cuts after individual assessment.
