Revision

Protein- Why do we need it? Protein is the most important nutrient. This is because it is the only nutrient that can be used for growth and the building and repair of body cells.

What foods are good sources of protein?

Proteins - what are they? Proteins are made up of long chains of building blocks called amino acids. There are 20 amino acids that make up proteins! Our bodies can make 11 amino acids called non dispensable amino acids. We need to obtain the other 9 essential amino acids from our diet!

Amino Acids 10 essential amino acids are needed by children for growth 8 essential amino acids are needed by adults for the repair and maintenance of body cells

Foods containing all the essential amino acids are said to have high biological value (HBV). HBV foods come from animal sources and include…. Meat, fish, poultry, eggs, milk and cheese. (Soya is the only plant HBV protein!)

Other protein sources from plants include; peas, beans, lentils, cereals such as rice, wheat flour, pasta, nuts & seeds. These foods tend to lack one of the essential amino acids and are said to have low biological value (LBV).

Write down a definition…. High Biological Value (HBV) - Protein foods containing all of the essential amino acids including, meat, fish, cheese, eggs, milk and also soya. Low Biological Value (LBV) - protein foods that lack one of the essential amino acids including, peas, beans, lentils, cereals such as rice, wheat flour, pasta, nuts and seeds.

Vegetarians Lacto ovo Vegetarians - don’t eat meat but will eat eggs and dairy products. Lacto vegetarians - do not eat meat or eggs but will eat dairy products such as milk. Vegans - DO NOT eat any animal products which include meat, poultry, fish eggs and dairy products and bee products like honey.

Textured soya is a protein made from wheat and soya beans. It can be made into different shapes and sizes and even made into products which look like ham, beef and poultry. Quorn is the name of the brand! Mycoprotein is the main ingredient in all Quorn products. It's made from a member of the fungi family. It is low in fat and can be made into many shapes and sizes. (HBV source of protein) Tofu is soya bean curd and can be used in stir fries and other dishes. It is high in protein and also calcium! Soya Beans Whole soybeans are an excellent source of protein and dietary fibre. Soy protein is the only vegetable with a complete protein. Raw soybeans are toxic to humans so must be cooked! Soya beans can be made into many products including soy flour and soymilk!excellent source of protein
