17  Carnival in Panama is considered one of the greatest celebrations in the city, as well as in the rest of the country. It is 4 days when all emotions reach their maximum peak, starting in the morning and ending the next day. The celebration of this festival has been happening since the 1900s, and officially begins the fourth day before Ash Wednesday. One of the traditions is known as the mojadera, or "getting drenched" in water. This happens in the morning. In the afternoons there are parades with floats (New Orleans style), and on Sunday the national dress, the pollera, is represented by the queens and all those who participate. During the night the streets are covered with people dancing to the rhythm of international music groups and bands.

19 Breakfast  Coffee is a traditional way to start the day and Panama grows some of the most coveted coffees in the world. Cafe con leche, or coffee with milk, is served with sweet condensed milk, not fresh milk. Breakfast includes eggs, various fried meats and deep-fried corn tortillas, which are thicker than Mexican tortillas. Hojaldras are doughnut-like strips of fried dough drenched in powdered sugar. Another Panamanian breakfast specialty is gallo pinto, or spotted rooster, a thick Caribbean-style porridge made with pork, rice and beans.

20 Servings : 6 Servings Ingredients:  2 cups all-purpose flour  1/2 teaspoon salt  1 tablespoon vegetable oil  1 teaspoon baking powder  1 teaspoon white sugar  1 cup water as needed  oil (for frying) Directions:  1. In a large bowl, mix the flour, salt, baking powder, and sugar.  2. Make a well in the middle and add the oil and a little water.  3. Knead, adding the rest of the water little by little.  4. Let the dough sit overnight in the refrigerator.  5. When you are ready to make the hojaldres, heat a pan with the oil for frying over medium- high heat.  6. To form the hojaldres, take a golf ball size of dough and stretch it by hand until it is roughly 6 inches in diameter. Drop the stretched dough into the hot oil and fry until it is golden brown, turning once. The dough will puff up and parts of the hojaldre will be crispy and parts will be bready.  7. ENJOY!
