3 That’s right, adjective clauses describe nouns (like adjectives do).

4 If the “speaker” knows that the thing he/she’s describing exists, use the indicative I want the key that opens this door. Quiero la llave que abre esta puerta. Juan is looking for the book that he left somewhere. Juan está buscando el libro que él dejó en algún lugar. There is a Canadian who can do the measurements. Hay un canadiense que puede hacer las medidas.

5 If the “speaker” does not know if the thing he/she/it’s describing exists, use the subjunctive I want a key that opens the door to happiness. Quiero una llave que abra la puerta de la felicidad. Juan is looking for a book that contains the secret. Juan está buscando un libro que contenga el secreto. There isn’t a Canadian who can do the measurements. No hay ningún canadiense que pueda hacer las medidas.

6 Escribir en español I want an apple that’s good. Juan wants the apple that’s good. There isn’t a task I won’t do. They were looking for a job that paid well. Juan had a job that paid well. Uh, we need the man who knows the answer to the question. We needed someone who could help us.
