8. A recipe from Ghana Fish and Eggplant Stew Ingredients:
1 lb fresh fish fillets
1 chopped onion
1 chopped green pepper
2 tblsp cooking oil
16-ounce can cut tomatoes
1 peeled and diced eggplant
8-ounce can tomato sauce
1 cup water
1 half tsp salt
Three fourth tsp ground red pepper
10-ounce cut okra
Hot cooked rice
To cook stew:
1.Saute all meats in cooking oil, until tender
2.Add veggies, spices, etc.
3.Simer over low heat
4.Serve with rice or potatoes
