1 Cooking and Chefs This presentation will give you an incite into cooking and chefs. It will give recipe ideas and suggestions for alternative ways of cooking. It will also teach you about what a typical day looks like.

3 Ways of cooking pie When most pie’s are made the bottom is pricked with a fork to allow steam out of the pastry. This prevents the bottom of the pie from going soggy. Sometimes a hole is made in the top of a pie or a pie bird is used. This allows extra steam to escape from the pie and keeps the pastry extra crisp.

4 Types of Pie There are many different types of pie. These include pie’s with pastry tops and pie’s with pastry on all sides. Pie’s can have shortcrust or puff pastry and can come with lattice lids which are pastry woven into woven patterns.

5 Ingredients 2 tbsp olive oil 3 chicken breasts, skin and bone removed 150g/5½oz button mushrooms, quartered 1 small onion, chopped 1 garlic clove, finely chopped 50g/2oz butter 2 tbsp plain flour, plus extra for dusting 300ml/½ pint milk 200ml/7fl oz chicken stock freshly grated nutmeg, to taste freshly ground white pepper pinch salt small handful fresh parsley, chopped 500g/1lb 2oz ready-made short-crust pastry 1 free-range egg, beaten Chicken pie recipe

6  Morning – Check deliveries, see how many people are coming, do any last minute shopping.  Mid-Day: A typical time for lunch service can start anytime between 11:00 AM and 12:00 PM. Guests will begin to arrive and the executive chef will remain near the pass through window to assure each dish is prepared and plated properly. This requires maintaining a friendly and professional demeanor under stressful conditions.  Afternoon: the chef must make sure that he has enough food for the evening and make sure the staff know the specials and what is on the menu and what alterations could be made like if they wanted no salad or a sauce.  Evening: Before dinner service begins, the chef may have a quick meeting with all line cooks and sous chefs to go over expected cover counts and the evening’s specials. The chef may need to host a secondary meeting with the front of the house staff to assure everyone has all the correct information about any specials. A typical day

7 What do chefs wear Most chefs wear a similar outfit when working. This consists of a white chefs jacket and a white apron with pockets. Most chef’s also wear a white hat to keep any hair and grease away from the food.
