2 As president I want to welcome everyone back from the Summer break! I want to thank Donna for hosting, serving dinner and filling in for me at the last meeting. I am very excited for what this new year will bring for all of us. I have given a press release about SALA to the Home Owners Association welcoming new members! Please bring any friends that are interested. We had 3 guests at the last meeting, please encourage them to join and make them feel welcome. I hope you all make time to bring your families to our bonfire next month. It will be a time to remember. See you in October. 6 Easy White Chicken Chili 1 tablespoon of olive oil 3 skinless, boneless chicken breast halves 1 large onion 2 cloves garlic, minced 5 ¼ cups of chicken broth 3 (15 oz) cans white kidney beans, rinsed and drained 2 (4 oz) cans of chopped green chiles 1 tablespoon dried oregano 1 teaspoon cumin 2 pinches of cayenne pepper, or to taste ¼ cup fresh chopped cilantro, or to taste ½ cup shredded Monterey Jack cheese, or to taste Salt to taste Directions Heat olive oil over medium heat. Cook chicken, onion and garlic in hot oil until the chicken is browned completely, 3-5 minutes per side. Remove the chicken to a cutting board, cut into 1 – inch pieces, and return to the pan; add chicken broth, beans, green chilies, oregano, cumin, and cayenne pepper. Bring the mixture to a simmer and cook until the chicken is cooked through, 30-45 minutes. Once complete serve in bowls and top with cilantro and cheese. Salt to taste.
