The origin of the legend of ‘Tripas à moda do Porto’ is related with the conquest of Ceuta, in the north of Africa, back in 1415. The city was deeply involved in the military expedition commanded by the king D. João I.This was the start of the ‘Discoveries’. Most of the work for the ships construction was done in Porto, in Miragaia and Ouro shipyards.The ropes, sails, ironmongery and other goods were also produced in Porto to equip the ships for the long trips in the Ocean.

Besides all the work in the construction of ships, Porto also provided everything the city had to the provisions of the fleet. In particular, the meat. All meats that have been cleaned and salted were properly lodged in the boats. Therefore, the city was sacrificed, and kept only the offal for the population, in particular the tripes. Thus the tripes stew dish known as “Tripas à moda do Porto” was invented, and would eventually be perpetuated to the present day, becoming itself one of the most characteristic elements of the city. The same way, the nickname "tripeiro“, meaning ‘tripes eater’ was attributed to the habitants of Porto. The tripes stew is accompanied by beans, sausages, carrots, bacon and rice, being spiced with cumins.
