2 MIcro-NanOSystems ECAD Laboratory 07.04.2006 Good Food: Overview… GoodFood The GoodFood project is a Integrated Project presented within the IST thematic area of EC VI FP and aims at developing the new generation of analytical methods based on Micro and Nanotechnology (MST and M&NT) solutions for the safety and quality assurance along the food chain in the agrofood industry. Current and future concerns related to agrofood safety and quality will increasingly require a multidisciplinary and universal approach based on the massive use of simple detection systems able to be used “near to the foodstuff”.

3 MIcro-NanOSystems ECAD Laboratory 07.04.2006 Good Food: … Overview… The technology used nowadays to assess food safety and quality relies on lab solutions that are bulky, costly, punctual and time consuming. On the contrary, GoodFood GoodFood approach will comply, through the development of innovative M&NT solutions, with the needs of ubiquity, low cost and low power, fast response, simple use and fully interconnection to the decisional bodies. A multidisciplinary integration of know-how and technology is required for addressing the broad requirements of the agrofood field.

The Project aims at the vertical integration of Micro and Nano Technologies from the land to the market. The main demands identified by the agrofood sector will be the applications that will drive the technological GoodFood developments within GoodFood.

5 MIcro-NanOSystems ECAD Laboratory 07.04.2006 Good Food: … Overview… The need for increasing the control of products at different critical steps of the food chain (control of raw materials, improvement of food processing, monitoring of storage and logistics, and control of safety and quality of final products) will be addressed GoodFood by GoodFood with a vertical and horizontal integration of food, bio, and electronics experience for developing a set of systems with clear breakthrough solutions to specific safety and quality and traceability requirements.

6 MIcro-NanOSystems ECAD Laboratory 07.04.2006 Good Food: … Overview The proposed solutions will be also integrated under an Ambient Intelligence approach, which will allow fully interconnection and communication of multisensing systems. The technological developments within GoodFood GoodFood are driven by the main demands identified by the agrofood sector, and they are focused into a number of relevant food targets. The M&NT inspired solutions developed therein are foreseen as the GoodFood stepping-stones of the long term GoodFood vision: ‘bringing the lab to the food stuff from the land to the market.'

7 MIcro-NanOSystems ECAD Laboratory 07.04.2006 Good Food: Objectives… GoodFood Overall GoodFood objectives are: - to demonstrate to the agrofood sector actors (final consumers included) the advantages driven to the complete food chain control by the use of Micro&Nanotechnology inspired systems - to develop and integrate such systems with improved performances compared to the state of the art - to introduce the Ambient Intelligence (AmI) paradigm in the agrofood chain by developing a vineyard pilot site and by applying the results to the activities of all quality and safety technical solutions of the project.

11 MIcro-NanOSystems ECAD Laboratory 07.04.2006 Good Food: … Objectives… GoodFood GoodFood aims at increasing awareness at different levels: - To the citizens: To show that Ambient Intelligence (AmI) and ubiquitous sensing can help on increasing food safety and quality. -To the Agrofood Community: To demonstrate advantages of the MST, AmI and wireless solutions for new and/or current analytical tools and test methodologies, as well as their impact on improved farming. -To the Microsystems industrial community: To show that Agrofood is a good niche market for MST solutions.

12 MIcro-NanOSystems ECAD Laboratory 07.04.2006 Good Food: … Objectives - To the SME and foundries: To develop demonstrators and market plans that show viability and lower the risks of future market access - To the MST scientific community: To give a path for take-ups, start-ups. A multidisciplinary integration of know-how and technology is required for addressing the broad requirements of the agrofood field. A suitable scenario was identified by the agrofood community for keeping such a global view.

13 MIcro-NanOSystems ECAD Laboratory 07.04.2006 Good Food: Achievements… GoodFood The GoodFood Partnership have identified the technical achievements necessary to get the objectives of project: I) Technology solutions for the detection of antibiotics residues To develop a portable system for future application in fast antibiotic screening in milk at the point of demand (farm, collection truck or dairy). The system will be based on a fluorescent optical biosensor device based on evanescent waves and combined with a microfluidics system (with a disposable element) for sample preparation. The integration within an AmI scenario will be also pursued. II) Microsystems Technology solutions for the rapid detection of pesticides To design and develop innovative immunodiagnostic microarray devices for rapid atline assessment of pesticides in wine processing operations. To develop instrumentation and automated liquid handling systems compatible with the microarray devices. To address the pesticide traceability issue within the wine production process. To assess the role of the immunodiagnostic microarray within the AmI scenario.

14 MIcro-NanOSystems ECAD Laboratory 07.04.2006 Good Food: … Achievements… III) Microsystems Technology solutions for rapid detection of Toxigenic Fungi & Mycotoxins To develop microsystems technology solutions for the rapid detection of toxigenic fungi and mycotoxins by natural bioreceptors, artificial receptors technology and nano-electrode devices. To enable simple recognition and transduction of the presence of mycotoxins and DNA arrays for toxigenic fungi in land raw materials and processed foods. To integrate the developed sensors for an implementation of scenario concept in the Ambient Intelligent approach taken as model. IV) Microsystems Technology solutions for the rapid detection of viable foodborne pathogens To develop and characterise different sensors, which are based on innovative DNA sensing technologies for the direct and real time measurement of target DNA sequences of pathogens present in the food matrix. The most suitable sensors devices and microfluidics capabilities will be incorporated in a final portable system. Suitable instrumentation will be developed for appropr iate software and microcontroller functions. Generic packaging and interconnect solutions will be discussed in order to streamline the sensor developed here for later use for implementation of scenario concepts in the Ambient Intelligent approach.

15 MIcro-NanOSystems ECAD Laboratory 07.04.2006 Good Food: … Achievements… V) Multisensing Microsystems integration for food quality control To develop new Advanced Intelligent Multisensing Microsystems capable to work as E-Nose and E-Tongue and arranged for future integration into a single intelligent system in order to simultaneously combine olfactive and taste effect making use of different chemical microsensors array. The combination of the different sensors and techniques set-up for the special agrofood application will allow to improve the Quality Assurance for different foodstuff. At different stages of the food chain. The systems will be integrated by keeping in mind the requirements of an Ambient Intelligence Approach. VI) Multisensing Microsystems for Logistics food control To develop a dedicated microsystem for logistics food surveillance, by means of a flexible substrate implementation of multisensing systems. These multisensing systems will be based either on solid-state gas sensors or IR-gas sensing system. A benchmark between both systems will be performed as well as the combination of both sensing principles in order to overcome their main drawbacks. The implementation of AmI solutions will be investigated.

16 MIcro-NanOSystems ECAD Laboratory 07.04.2006 Good Food: … Achievements VII) Ambient Intelligence To apply the AmI concept in the selected agrofood field. It is aimed to guarantee security, quality and reliability of a complete food-chain (from land to market).This goal will be achieved by the integration of the information acquired by sensors at each step of the food-chain in a large-scale distributed, heterogeneous and integrated platform for service provision. This includes analytical micro-systems, distributed databases, intelligent and intuitive systems and interfaces, able to support the assessment and information spreading of healthiness and quality of food. The impact to both the production process and final customer in terms of quality and traceability will be evaluated both technically and economically. VIII) Dissemination and Training, Exploitation and Demonstration To increase the awareness of the Agrofood key actors on the advantages of the MST based solutions for the safety and quality assurance. For supporting the dissemination and demonstration activities planned for such purpose, a market study will be also carried out in order to better identify needs, and potential niches for the proposed applications.
