3 Main Ingredients in Pastries Flour- to form structure Salt- Contributes to flavor Liquid- Provides moisture Fat- Provides tenderness –Firm fat= flaky crust –Oil= Mealy, hard crust

4 Measuring for Pastry If you do not measure flour, fat, and liquid EXACTLY as you should, a poor quality pastry will result. Making a basic pastry

5 Possible Problems Tough Pastries- too much flour, not enough shortening, or too much water Dry, crumbly pastry = not enough water

7 Dessert Pastries Fruit Pies- usually two crusts and baked with both pastry and filling –(Ex: apple pie; blueberry pie) Custard pies- made with filling of egg and milk, then baked along with the pastry –(Ex: cheesecake; pumpkin pie)

8 Cream Pies- Filled with mixture that has been thickened with a starch –(Ex: banana cream pie) Chiffon Pies- Filled with cooled gelatin mixture made from beaten egg white- the filling gets poured into an already baked shell and cooled. –(Ex: key lime pie)

9 Pie Shells Baked Shell- ONLY 1 layer of crust Double Crust- 2 layers of pastry crust –Lattice topLattice top Crumb crust- Usually made from crumbs of graham crackers or cookies

10 *Gluten* Gluten = A protein in flour –It develops when you moisten and stir flour. –Gluten creates a structure that traps air and hold steam during baking. This trapped air is what makes a pastry light and fluffy. –If gluten in flour is over developed too much it will result in a tough pastry.

11 Handling Pastries Do not over mix dough when adding liquid. Do not use the rolling pin too long Do not over stretch the pie crust.

13 Other Info Ingredients for pies should always be cold. Prick holes in the bottom of crust to prevent “blistering” (pricking holes releases steam and helps avoid air bubbles forming between the crust and the pan.) Decorate edges by “fluting” –Fluting the Pie CrustFluting the Pie Crust – Always roll from middle to outside when rolling dough Crumb crust is held with the help of a fat substance

15 Pie Quest Project!! Your ultimate dream has come true!! Finally, you’ve saved up enough money to start your own pie making business!! Pies are becoming the new “in” dessert all across the United States and you want to set up your shop in the place you feel will be the best for you and your business.

16 1. Research and find a town or city that you’d like to start your pie shop. It should not be right here in Palatine, it can be anywhere in the U.S. that you’d like – remember this is your biggest dream coming true!! Maybe even look into what successful pastry shops have or do that makes them successful. -You must type this up, explain why you chose this location, backing up your explanation with information you found during your research, and include at least two pictures that are either of your location or relate to it. (Ex: Downtown Chicago: Picture – Navy Pier; Picture – Chicago Bears; Picture – Chicago’s city buildings)

17 2. Come up with a creative and catchy name for your pie shop. You want people to remember it and know that your pie shop is the place they’ll only want to go for their pies! You must also design: How the name of your shop will look What colors you’ll have and why you chose to use them (Color psychology? Favorite colors? Tied with theme of shop/location?) How it will be displayed at the front of your store –Light up? On a canopy? On a window front? Where?! *This could be drawn by hand or (preferably) done using the computer*

18 3. Research all the kitchen equipment and cooking tools that you’ll need to have a successful pie shop. (IDEAS: Ovens – what type?, Refrigerators, Stoves, Cooling/Warming racks, Dish washer, Microwave, Bakers tables, Dough mixers, Dough rollers, Scales, Sinks, Measuring utensils, Mixing utensils, Pots, Pans, Timers, Knives, etc. ) Here’s the catch – while you’ve save up enough, you’ve only budgeted for $40,000 towards equipment and tools. If you have money left over you’ll be able to apply that to food and rent for your shop. **Each piece of equipment or cooking tool must include a picture, label, price, description of its function, and where you’ll be purchasing it from.

19 4. Since you’re such a fabulous baker, you can make any pie in the book, but at your pie shop you want to be known for one very special pie. -What will that pie be? (What is its name?) -Why did you choose that to be your specialty pie? (Meaning behind it, importance to you, if it reflects your location well, such as the city or state you’re in, etc.) -What ingredients do you need to make one of your specialty pies? Since this pie is your specialty, I wouldn’t want you to give away your secret recipe, so only the ingredients are required. No measurements or cooking instructions are needed.

20 5. Your pie shop will open in just 2 weeks from now. You’ll want to start making pies and money quickly so you will need to get the word out to everyone in the area about your amazing pies! What will be your one main way of advertising your new shop? -Flyers – and how will you pass them out, who will you choose to give them to, where will you put them up? -Newspaper or magazine add – what will you say in this advertisement? Internet site – how will you make sure customers know about your site, what will your website include, what will the website address be? *These are only a few suggestions of ways to advertise. Be creative – remember this is your dream you want to stay alive forever!! *Your advertisement must be made using the computer*

21 6. Compile all of these necessities of your pie shop into a neat & creative PowerPoint. Think of it as a keepsake and artifact of how your pie shop began, and the efforts it took to get it started and make it successful!! (You will email the final project to me!) Requirements: Each section on a different ppt slide (if you need more than one slide for a section, that’s fine!! You must include a references page of where you got your information from in your researches. Sections 1, 3, and 4 are required to have substantial information (4-5+ sentences) in a readable font style. Creativity & color to grab your customer’s attention is KEY! Good Luck and HAVE FUN!!!
