FACTS ABOUT CHINA Hong Kong is now part of China having been independent under British rule for 100 years. It is a very strict Communist country. Mao Se Tung was one of the most famous leaders. The Great Wall of China is one of its greatest attractions.

CHINESE CUISINE China covers a large territory and has many nationalities. Hence, there is a wide variety of Chinese foods, each with quite different but fantastic and mouth watering flavours. Chinese choose chopsticks as their tableware rather than a knife and fork. Chinese people consider a knife and fork to represent a sort of violence, and to resemble cold weapons.

LOCAL SPICES Scallions, fresh ginger, root garlic or chilli pepper; with the use of wine, aniseed, cinnamon, peppercorn or sesame oil are used a lot in Chinese cookery. Soy sauce, sugar, vinegar and other seasonings may used to give a desired taste.
