TRENDSETTING MINDSETS ARISE IN SMART HEADS www.vemag-anlagenbau.com

The requirements The main focus is increase of production. Besides, the process has to be controlled and the product to be cooled down within a very short time (e.g. via a special air system).  The production output is significantly influenced by the cooling process and the air supply Production Output

The requirements The industry is always focusing on production efficiency. Cutting losses as well as weight losses have to be reduced. Therefore the temperature and the humidity of cooling air have to be regulated regardless of the outside climate conditions.  Conditioning of „cooled air“ is crucial for the productive efficiency Production efficiency

The requirements The industry is interested in higher product qualities and subsequently for extended shelf-life (BBD). The air for cooling and for the production should have no microbiological contamination. Filter as well as ultraviolet light might be used.  BBD depends on microbiological quality of „cooling air“ Quality / BBD

The technical solution Function of the VEMAG CLIMAMAT® hose system

The technical solution Function of the VEMAG CLIMAMAT® hose system Conditioned air is dispersed via textile hoses mounted below the ceiling. For an optimum circulation within the room, the hoses are perforated in a special way. The air is controlled by humidity and temperature. The regulated and constant air flow creates constant and reproduceable conditions. Air can be treated with ultraviolet light.  Air is used with a humidity of 75 - 90% and a temperature of ~ 20 °C

The difference Comparison Controlled air speed, tempe- rature and humidity Optimum, constant air flow VEMAG CLIMAMAT® hose system Conventional methods (fans in front of the racks) Irregular air speed, high humidity and temperature Irregular air flow  Compared to other methods CLIMAMAT® succeeds constant, controlled air conditions for cooling bread

Reference Kronenbrot KG Würselen, Germany Method of cooling bread before installation of VEMAG CLIMAMAT® hose system: Loaded racks are cooled down in a room, via opened windows

Reference Kronenbrot KG Würselen, Germany Method of cooling bread after installation of VEMAG CLIMAMAT® hose system: Loaded racks in a room equipped with textile hoses Air filters are treating the air at the inlet. The machine unit is reducing the humidity, creating the right room temperature pending on settings and special control logics.

Reference Haverland GmbH & Co. KG Soest, Germany Method of cooling bread before installation of VEMAG CLIMAMAT® hose system: Fans installed in front of the racks Racks in the corridor

Reference Haverland GmbH & Co. KG Soest, Germany Method of cooling bread after installation of VEMAG CLIMAMAT® hose system: Racks in a separate room equipped with textile hoses

Reference Haverland GmbH & Co. KG No. 1 multi-grain wheat bread weight [kg] time [hh:mm]  Weight loss: 2,54% time [hh:mm] Core temp. [°C]  Changing core temperature: ∆T 70°C within 4 hours 30 minutes Conventional method  CLIMAMAT® LAGER COOL approx. 1/5 of time Conventional method  CLIMAMAT® LAGER COOL approx. 1/3 weight loss (%)

Reference Haverland GmbH & Co. KG No. 2 multi-grain wheat bread Conventional method  CLIMAMAT® LAGER COOL approx. 1/5 of time Conventional method  CLIMAMAT® LAGER COOL approx. 1/3 weight loss (%) time [hh:mm] Core temp. [°C]  Changing core temperature ∆T 70°C in 4 hours 30 minutes weight [kg] time [hh:mm]  Weight loss: 3,78%

Reference Haverland GmbH & Co. KG Soest, Germany Prior to taking-into- operation of our VEMAG CLIMAMAT® hose system, slicing time is undefined. If the bread is too dry, the bread stacks slide and move when slicing. The result is bread which can not be packed  rework.

Reference Haverland GmbH & Co. KG Soest, Germany Daily slicing quantity reworkpercentage [%] 10000 kg4860 kg48.6 Prior to taking-into-operation After taking-into-operation Daily slicing quantity reworkpercentage [%] 10000 kg2700 kg27 After taking-into-operation used knives have to be grinded significantly less often

Our know-how Cooling bread System solutions for the thermal treatment of foodstuffs with world-wide experience for decades. Installation design considering product requirements, process parameters and conditions on-site. Individual regulation of humidity and temperature for cooling with air.
