By being left in distilled water allows the no contamination of the unknown substances or sodium chloride to affect the osmosis process within the potato cells. According to theory, the potato slices in distilled water should increase in mass as the osmosis process would allow water to move through the semipermeable membrane of the potato cells. This control variable will allow the comparison of the masses of the potato pieces in sodium chloride.
