Disorder Tissue breakdown that is not caused by pathogen or mechanical damage. Increase susceptibility to pathogen They are due to: Unfavorable weather Nutrient deficiency Stress condition

Low temperature breakdown
Flesh browning Usually moist No external symptoms

Internal browning Low temperature No external symptoms

Senescence breakdown Browning and breakdown of the tissue under the skin Often darkens the skin Whole fruit may become dry Caused by: Advanced maturity Extended storage High storage temperature High humidity

Soft scald Irregularly shaped smooth brown areas on the skin
Induced by low temperature

Water core Water soaked areas inside the flesh
Advanced maturity promotes water core

Nutrient deficiency

Lenticels breakdown Nutrient imbalances Advanced maturity
Deep black spots

Bitter pit low Ca disorder dark, sunken lesion at or beneath surface

External CO2 injury Brown lesions on the skin

Internal CO2 injury Brown necrotic core External appearance is normal
Injury is caused when fruits are returned to normal conditions

Low O2 injury Purpling and discoloration of the skin
Alcoholic odors and flavour Water soaked lesions on the skin O2 less than 2%

Core browning Brown flesh around the core
Develops after several months of cold storage Caused by: advanced maturity Delayed cooling Low O2 atmosphere (less than 2%)

Superficial scald Browning or bronzing of the skin
Develops several months later in cold storage Aggravated by delayed cold storage and CA establishment
