Jacques Recht, one of the best known winemakers in the east and who lived outside Montross at the time , was also a member. During the time the group was in existence he shared his knowledge of winemaking with us, and especially when he conducted a special “Component Tasting” for the group.

10 Knowledgeable winemakers work to balance these elements –
“WINE IS NOT ABOUT FLAVOR, IT’S ABOUT STRUCTURE” The structure of a wine is made of several major elements or components. Some of these are; ACIDITY, ALCOHOL, BODY, SWEETNESS, AND TANNINS. Knowledgeable winemakers work to balance these elements – components, to produce the best wine they can. There are tricks (green grapes) they can use to improve flavors – and there is an increasing about of chemistry available to them as well. SO…

12 NOT! AND… you taste all of them all over your tongue!!!
The “Map of the Tongue” 1. There were 4 flavors; sweet, salt, sour, and bitter. NOT! 2. You tasted sweet on the tip of the tongue, salt towards the front, but on the sides. Sour was tasted on the sides behind the salt sensors, and bitter was tasted in the back. There are actually at least 5 flavors we can taste; sweet, salt, sour, bitter, and umami (the taste of glutamate – MSG). AND… you taste all of them all over your tongue!!!

14 Glorioso’s Italian Market in Milwaukee, WI
Lesson learned from Glorioso’s Italian Market in Milwaukee, WI It is a smallish local store – It has one location with good customer service, and they tripled wine sales and doubled the size of their wine department in ONE year when they added information that enabled their customers to learn more about the wines they liked, and the foods (the store sold) that went with them. ~ Increases understanding of components/elements. ~ By suggesting food pairings encourages use in everyday life.
