2 Record Keeping COR Standards: Section 4.4
4.4.1 The operator shall maintain records and relevant supporting documentation such as visual aids, maps, flow charts, concerning inputs and details of their use, preparation and transportation of organic crops, livestock and products. The operator shall maintain the organic integrity of the products and shall fully record and disclose all activities and transactions in sufficient detail to be easily understood and sufficient to demonstrate compliance with this standard.

3 Section 4.4.2 Records shall maintain it possible to trace The origin, nature and quantity of the organic products that have been delivered to the production unit or operation The nature, quantity and consignees of products that have the production unit Any other information for the purpose of verification, such as the origin, nature and quantity of ingredients, additives and manufacturing aids delivered to the unit and the composition of processed products’ Activities or processes that demonstrate compliance with this standard

Tracks the organic integrity of a product from its origin to the customer From the farm to a broker/trader to the processor/manufacturer Audit consists of: Field histories , prior land use, accurate maps, field locations , field ID, acreage, Field management, all field activities, dates, non GMO verification for purchased inputs Seed used, seed search, non GMO verification Harvest, records for organic and non organic, dates, amounts, fields, storage locations, buffer management Storage, running inventory, source of incoming product from harvest, amounts in and out, removal of own seed Transportation, truck clean out affidavits Lot numbers, BOL’s Sales, records for organic and non organic Complaint log
