- Antiquity: - Middle ages: * A cuisine developed in Sicily that some consider the first real Italian cuisine. - Early modern era: Antiquity: Political unrest had a role in Italian cuisine, it was mixture of civilizations like Greeks. Middle ages: Italian cuisine was affected by Greeks and Arabs and they introduce new flavors and spices to Italians. And they also learned how to reserve food in olive oil and by getting it dried and adding salt on it to keep it for a long time. * A cuisine developed in Sicily that some consider the first real Italian cuisine. Early modern era: From 18th century they started to write their recipes in books And now they add wine to their recipes to give a strong flavor.

PIZZA : There are 2 types of Italian pizza : ~ Neapolitan ~ Lazio Pizza was originally invented in Naples, Italy , and the dish has since become popular in many parts of the world

6 In 1889, during a visit to Naples, Queen Margherita of Italy was served a pizza resembling the colors of the Italian flag, red (tomato), white (mozzarella) and green (basil). This kind of pizza has been named after the Queen as Pizza Margherita
