2 Information and facts The xi'an cuisine is famous in a part of china named Shaanxi, where the cuisine originated from. Shaanxi 205,800km2 is size and the current governor is Hu Heping. This cuisine is best know for their pork, lamb and the flavoring is strong and heavy. There is savory flavors such as salt, garlic, onion, and vinegar. Cooking methods are mainly steaming, frying, and stir-frying. Due to its location between to provinces of Sichuan and Shaanxi, the taste of their cuisine resulted in both being sour and spicy, in with a salty taste to it. Also eating cold noodles along with mustard and vinegar are better, since the condiments not only give sweet and sour taste. Lao Tong Cured Mutton is also another dish that represents this dish as well as the Taihou cake, this is a famous snack in the country of Shaanxi.

3 The features in Xi'an The features in Xi'an are: Cold Noodles, Dumpling in Sour Soup, Lao Tong Cured Mutton, Pita Bread Soaked in Lamb Soup, Taihou Cake, Fan Family Braised Pork, Roujiamo (Finely Chopped Pork Stuffed in Baked Pancake), Xian Kabobs, Guan Tang Baozi, Shi Zi Bing, Biang Biang Mian, Fruitcake, Dried Fruits and Nuts and Feng Mi Zong Zi. The 3 representing dishes for Xi'an are Roujiamo, Biang Biang Mian and Xi'an burger. The Xi'an cuisine is a healthy cuisine because there is a mixture of vegetables and meats.

4 Xi'an Burger Method: Combine the Lamb, 1 tbs of oil, cumin seeds and soy sauce in a bowl and let the lamb marinate while the other ingredients are being prepared. The estimated time for this step is around half an hour. Heat a wok or a large, heavy skillet on high and pour in enough oil to thinly cover the bottom. When very hot, add the lamb in one layer. Let it sear well on one side, then brown on all sides. After the initial sear, keep the lamb moving. Add the onions and a pinch of salt while scraping up any browned bits. When the onions have developed some color, add enough water to go halfway up the lamb. Bring it to a boil, then reduce it to a moderate simmer. Simmer till the lamb is tender, adding more water as needed when things are looking too dry. When the lamb is mostly tender and the pan is mostly dry, add the scallions, green chili and the rest of the cumin. Stir often until the chili are softened but still bright green. Add salt, sugar, or soy sauce if needed. Serve over rice or noodles, or in a crusty bun. Xi'an Meat Burger w/ Steamed Lamb It is highly recommended to use a traditional oven over an electrical one to prevent it looking like an American Burger. This may look unappealing but it is one of the most delicious dishes that China has to offer. Serves: 8 Ingredients: 340g of Lamb 1.2Kg of Lamb cut in ¼ and trimmed of most the fats Canola Oil 4 tbs cumin seeds, toasted until fragrant 3 Garlic Cloves, chopped 2 tbs Soy Sauce 1 Small Onion, thin slices 3 Scallions, thinly sliced 2 Green Chilies, seeded, chopped

5 Chinese Table Manners In China it is best to know what the table etiquette is to avoid any embarrassment and banishment from the table if you are dining in china from the Qin Dynasty Era. Before actually having guest please make sure that you don’t have a rectangular table but a circular one so your guests can easily face your other guests. On the circular table have a bowl, a cup for tea and chopsticks. The dishes are in the middle and in formal dinners it's suggested to have tea, beer or distilled spirits to accompany your guests food. You as the host have to pour the guests their drinks as they cannot do so themselves. Start from pouring the drinks for the seniors and then the juniors. (Adults & Kids) They should know to express their thanks when their cups are filled. You as the host will be the one to seat the guests as they cannot do it themselves as it is disrespectful in China to do it themselves. All the dishes besides the soup (In the bowl) should be eaten with chopsticks, don’t twiddle chopsticks because they show disrespect to the host (Who is you). Also, while dining make sure to pace your eating and never EVER smoke in the table as it is obviously rude. If you are making a toast to someone on the table they will know to stop whatever it is their doing and listen to you. It is impolite to urge others to drink though.
