3 Proteins = Polypeptides Production: in the ribosomes through the process of protein synthesis Monomer: amino acids (20 total) (assembled together based on DNA instructions and connected by a peptide bond) Elements: C, H, O, N

4 Recognize protein structure by looking for NH 2 on one side and COOH on the other side

5 Structures Primary (1  ) – sequence of AA Secondary (2  ) – folds as alpha helix and pleated sheet Tertiary (3  ) – folded and coiled – now functional Quaternary (4  ) – more than 1 folded

8 Examples Enzymes – speed up reactions by lowering activation energy Hemoglobin – carries oxygen Insulin – controls blood sugar Keratin & Collagen – structure & support Muscles – contraction Channel Proteins – transport Antibodies – defense against pathogens (bad things)

9 Denature – unfolding or unbending of a protein Caused by a temperature or pH change EX: Cooking an egg = denaturing by applying heat
