Tetraterpenoids CAROTENOIDS Among this important group, the numerous compounds consist of C40 chains with conjugated double bonds, they show strong light absorption and often are brightly colored (red, orange). They occur as pigments in bacteria, algae and higher plants.

Carotenoids can be considered derivatives of lycopene, found in tomatoes, fruits and flowers. Its long straight chain is highly unsaturated and composed of two identical units joined by a double bond between carbon 15 and 15'. Each of these 20 carbon units may be considered to be derived from 4 isoprene units.

Lycpopene Lycopene, a carotenoid found in tomato products, prevents oxidation of low density lipoprotein (LDL) cholesterol and reduces the risk of developing atherosclerosis and coronary heart disease according to a recent study published in the October 1998 issue of Lipids (Agarwal, S., and Rao A.V.; Tomato lycopene and low-density lipoprotein oxidation: a human dietary intervention study. Lipids, 33, (1998).

Lycpopene

Lycopene is a proven antioxidant. Antioxidants neutralize free radicals, which may damage the body's cells. Research shows that lycopene in tomatoes can be absorbed more efficiently by the body if processed into juice, sauce, paste and ketchup. The chemical form of lycopene found in tomatoes is converted by the temperature changes involved in processing to make it more easily absorbed by the body. Health Beneficial

Epidemiological studies have shown that high intake of lycopene-containing vegetables is inversely associated with the incidence of certain types of cancer. For example, habitual intake of tomato products has been inversely associated with the risk of cancer of the digestive tract among Italians. li>In one six-year study by Harvard Medical School and Harvard School of Public Health, the diets of more than 47,000 men were studied.

Of 46 fruits and vegetables evaluated, only the tomato products (which contain large quantities of lycopene) showed a measurable relationship to reduce prostate cancer risk. As consumption of tomato products increased, levels of lycopene in the blood increased, and the risk for prostate cancer decreased. The study also showed that the heat processing of tomatoes and tomato products increases lycopene's bioavailability.

Ongoing preliminary research suggests that lycopene is associated with reduced risk of macular degenerative disease, serum lipid oxidation and cancers of the lung, bladder, cervix and skin.

Other study showed that daily consumption of tomato products providing at least 40 mg of lycopene was enough to substantially reduce low density lipoprotein (LDL) oxidation

At the American Association for Cancer Research meeting held April 12, 1999 in Philadelphia, Dr. Omar Kucuk of Karmanos Cancer Institute in Detroit reported a study involving 33 men who were randomly assigned to take lycopene or nothing for 30 days before their prostate operations. Before surgery, the volunteers showed no obvious signs that their cancer had spread. After surgery, the doctors found that cancer tissue was less likely to extend clear to the edges of the lycopene users' prostate glands. And pre-cancerous cells in their prostates were less abnormal-looking.
