Menu Planning Resources USDA Food Buying Guide Flow Chart for Determining Grains/Breads creditability pg 3-7 Bread/Grain crediting chart pgs 3-15 & 16 For recipes not USDA = Appendix A pgs A-1 – 11 Corn products must be labeled Enriched or whole corn

Breakfast Requirements Food Based for Traditional- Age/Grade – K -12 Nutrient Standard Menu Planning 3 menu items

Traditional Breakfast K – 12 & 7-12* 1 Fruit/Vegetable = ½ cup Fluid Milk = 8 oz 2 Bread/Grain servings Or 1 Bread/Grain serving + 1 Meat/Meat Alternate Or 2 Meat/Meat Alternates

Nutrient Standard Breakfast 3 menu items Fluid milk + 2 sides

“Offer vs. Serve” – Traditional Breakfast 4 components offered Students must select 3 of 4 to be reimbursable

“Offer vs. Serve” Nutrient Standard Breakfast Students must select 2 of 3 menu items

Traditional Lunch Menu USDA Age/grade groups K- 3; 4-12**, 7-12 ** can be used for all 2 different fruit/vegetable = ¾ cup 1 Bread/Grain daily 8 per week for K-3 & per week for Meat/Meat Alternates* 10 per 5 day week offered 8 oz Fluid Milk

1 Meat/Meat Alternate You may offer 1 M/MA per day to = 10 for a 5 day week* This takes into account that some days you may offer more than 2 M/MA If you use this, you must check the 1oz. meat/meat alternate box on your production record all the time

“Offer vs. Serve” Lunch High Schools Requires school board approval for K-8 Students may decline up to 2 components 3 out of 5

Nutrient Standard Lunch Entrée Sides Fluid Milk Under “Offer vs. Serve” students must select 2 of 3 menu items

CN Labels & Manufacturers Product Formulation Statement (MPFS) Just what the heck are they?

Why CN Labeled Product Child Nutrition (CN) Label = assures the contribution toward the meal pattern requirements Provides certification what is printed = actual
