 Worked with Canteen Services from 1990 to 2011  Began as Food Service Manager at Saginaw County Jail  Opportunity to support different jails  Learned correctional sales  Added Commissary to Food Offerings  Grew Canteen Corrections from 2 accounts to 69 accounts when I left  Opened C Burns Consulting  Developed food proposals for Guam, Virgin Islands companies  Brand Emergency Boxed Meals for Harvest Farms Cindy Burns….What I do

JAIL FOOD SERVICE IN THE OLD DAYS……  The Sheriff’s wife generally provided the food for the inmates. If she was a good cook…….everybody won! If she wasn’t....they all ate a lot of burnt biscuits!

SO, I GOT THIS JOB….  Working in Corrections is different!  You learn Professionalism  Officers  Other employees  You work with Inmates  People Skills  Safety Circle

SO WHAT ARE THE HOURS?  4:30 in the morning to 7:00 at night  Inmates are served three meals a day  2500 calories as an average  No more than 14 hours from supper to breakfast

I HAVE ALL THIS PAPERWORK In corrections, a diary is important: Your shift Concerns with inmates Temperatures Medical Diets

SHOW ME THE MONEY  Hourly pay starts out around $ 9.50 an hour  Management can begin at $ 25,000 to $ 40,000  You can begin as an hourly and learn management

OOPS…..I THINK I MADE A MISTAKE!  There are Rules I know, but OOPS…  Now What?  Please remember, there are No Secrets in Corrections …… just be honest! AArRaGh! I can’t believe I did that!

He was living in his car before that I’ve been fired twice
