Different Times = Different Diets Nomadic people moved from place to place, hunting and gathering. What they ate depended on the location and the time of year. Had to keep moving or limit food to a few things. This is not a healthy diet!

In the last 200 years, things have changed lots!! Drying Freezing Salting Jellies And eventually: refrigeration

Herbs that Help Cinnamon, cloves & mustard help lots! Allspice, bay leaf, coriander, oregano, sage help too. Black pepper, red pepper and ginger are also great.

19 th Century Food ~ Refrigeration & Preservation Living in our hot climate before refrigeration meant that people had to treat their food differently. People looked for ways to make meats and vegetables last for longer without spoiling.

Cooling Pond These were on your property and connected to the cistern. It didn’t make food cold but it made it cooler than sitting in the sun! It’s similar to laying in a Kiddie Pool on a hot summer day.

Aspic & Daube de Glace Meat would spoil very quickly if left out. There was no protection from heat, flies and dirt. Aspic was used to preserve meat. But what is aspic?

Gelatin… The skin and feet of animals are boiled down to make a liquid gooey stuff. Then chunks of meat or vegetables are added. Then it’s poured into a pretty mold to shape it. Once it hardens, it’s taken out and displayed at the meal! Aspic was a French treat ~ similar to Hogs Head cheese that Cajun’s like to eat.

Molds for Meals Meals lasted up to three hours. If you were to sit that long, wouldn’t you want your food to look pretty? Different molds for different holidays and meals had that effect. Mmm….
