Ingredients 4 cups tomato juice 1 onion, minced 1 green bell pepper, minced 1 cucumber, chopped 2 cups chopped tomatoes 2 green onions, chopped 1 clove garlic, minced 3 tablespoons fresh lemon juice 2 tablespoons red wine vinegar 1 teaspoon dried tarragon 1 teaspoon dried basil 1/4 cup chopped fresh parsley 1 teaspoon white sugar salt and pepper to taste Directions In a blender or food processor, combine tomato juice, onion, bell pepper, cucumber, tomatoes, green onions, garlic, lemon juice, red wine vinegar, tarragon, basil, parsley, sugar, salt, and pepper. Blend until well- combined but still slightly chunky. Chill at least 2 hours before serving. Gazpacho

Geography Uruguay, on the east coast of South America south of Brazil and east of Argentina, is comparable in size to Oklahoma. The country consists of a low, rolling plain in the south and a low plateau in the north. It has a 120-mile (193 km) Atlantic shoreline, a 235-mile (378 km) frontage on the Rio de la Plata, and 270 mi (435 km) on the Uruguay River, its western boundary. Climate of Peru The climate of Peru varies quite a bit depending on the region and on the time of year. Humidity on the coast produces a sensation of cold, although temperatures rarely dip below 12°C. During the summer the sun beats down and temperatures often top 30°C. The central and southern sections of the coast feature two well-defined seasons: winter from April to October, and summer from November to March. The north coast is not touched by the effects of the cold current, which means it enjoys 300 days of sunshine a year and warm temperatures all year-long (as much as 35°C in the summer). The rainy season runs from November to March The highlands are much colder than the coast. A characteristic of the mountain region is the drop in temperature during the night. Temperatures commonly range around 24°C at midday before plunging to -3°C at night. The jungle features high humidity all year long. In the southern jungle, there are sometimes cold spells known locally as friajes or surazos, cold fronts which drift up from the far south of the continent between May and August, where temperatures can drop to 8-12°C.
