Manchester Fayre School Meals

About Manchester Fayre Manchester Fayre is Manchester City Council’s catering service. Each day in schools across the City, more than 24,000 school meals are made and served. Nutrition team check the menus to make sure they meet nutritional legislation. Menus have been accredited with the Soil Association ‘Food for Life Served Here’ award.

Food for Life Served Here The aim of the award scheme is to encourage and reward caterers who: serve fresh food source environmentally, sustainable and ethical food make healthy eating easy champion local food producers Every year we are inspected to verify the foods we use to create our school meals comply to the Food for Life Served Here Standards

Serving Fresh Food Standard 1.1 At least 75% of dishes on the menu are freshly prepared (on site or at a local hub kitchen) from unprocessed ingredients: Our menus have been assessed at 90% freshly prepared. Suppliers of fresh fruit & veg, meat, dry & frozen goods deliver foods to kitchens across the city every week. Catering teams are qualified and experienced at producing and preparing ‘cook from scratch’ school meals.

Sourcing environmentally, sustainable & ethical food Standard 1.2: All meat is from farms which satisfy UK animal welfare standards: Cooked sliced meats in sandwiches and as roast dinner meal are from Hartleys Farm Foods, a family run business based in Nelson, Lancashire. Raw meats used to make curries, bolognaise, pies and meatballs are from TC Meats based in Denton, Manchester. Red tractor symbol shows that the meat meets welfare standards e.g.physical & mental needs of the animal.

Sourcing environmentally, sustainable & ethical food Standard 1.3 No fish are served from the Marine Conservation Society ‘fish to avoid’ list. Dark green = most sustainable fish Red = fish to avoid (vulnerable or overfished) Standard 1.4 Eggs are from free range hens. Not kept in cages, free to roam indoors or outdoors Eggs we use are from a farm in Leyland, Lancashire ‘Happy Chickens’ or ‘Happy Eggs’

Make Healthy Eating Easy 1.5 No undesirable additives or artificial trans fats are used. 1.6 No genetically modified ingredients are used. Every food specification of every ingredient used to make school meals checked against food standard Our policy to also not use gelatine, lard, animal suet or rennet Menu meets food based legislation

The standards aim to influence eating habits! School Food Standards The standards aim to influence eating habits! Encourages and promotes nutritionally positive foods for example: At least 3 different fruits and 3 different vegetables be served each week Whole-grains once or more per week Oily fish served at least once every three weeks. Two fruit based desserts per week Permitted drinks only Restrict or prohibit certain food items for example: Chocolate, crisps, confectionery not permitted. No more that two items per week that have been deep fried, or have a crumb or batter coating Two pastry based dishes per week No more than two starches cooked in oil per week

Exceeding the Food Standards Supporting health of children in Manchester, traditional puddings replaced with yoghurt, fruit and savoury choices. 62% of added sugar has been removed from the menu - equivalent to 100,000 bags of sugar! At least 75% (our menus have been assessed at 90%) of dishes on the menu are freshly prepared (on site or at a local hub kitchen) from unprocessed ingredients.

Champion Local Food Producers...

Championing Local Food Producers Cheese served with jacket potatoes, sandwich filling and within recipes is produced in a Lancashire dairy powered by their own wind turbine: Cheese is produced from milk sourced from 9 dairy farms within a 10 mile radius of their dairy.

Future Plans Food for Life Served Here Inspection scheduled 9th July. New items featured on Summer menu e.g. sweet potato wedges and sugar snap peas. Fresh bread supplier Morris based in Lancashire, to supply different sandwich breads and breakfast items. Catering managers are off to the farm this Summer!
