Skillet Tortilla Pizza Yield: Each pizza serves one. Prep Time: 5 min Cook Time: 5 min Ingredients: 2 Flour tortillas (8 inch diameter) Makes 2 pizzas total,½ pizza per person 1 C. Grated mozzarella cheese ½ C. Tomato sauce 2 Basil leaves, minced Directions: Heat skillet on medium high heat. Place tortilla in the center of the skillet. When the tortilla begins to puff up, flip it over and turn heat down to medium low. Pierce air bubbles to deflate. Sprinkle the top of the tortilla with a thin layer of grated cheese. When cheese is halfway melted, spoon a thin layer of sauce, using the back of the spoon to spread. Sprinkle remaining cheese on top of sauce. Once the edges of tortilla begin to brown, remove skillet from heat. Cover skillet for a minute to allow cheese to continue to melt. Sprinkle with basil, cut with a pizza wheel.
